Mini Oatmeal Chocolate Chip Muffin Cookies
These mini Chocolate chip muffin cookies prepared with oatmeal in a muffin tin are chewy, crunchy & topped with the mixture of walnut, pecans.
Having a base of rolled oats these muffin cookies are topped with roasted nuts like walnut & pecans and absolutely dairy-free.

Chocolate chip cookies are one of the best cookies which are loved by every single person. I tried making a similar version by using rolled oats and added extra roasted nuts.
These are flourless, dairy-free, eggless, refined sugar-free and vegan.
These cookies have not used any baking soda or baking powder.
Using gluten-free chocolate chips & oats make these gluten-free.
They are chewy, little crunchy and topped with roasted nuts.
Being bite size these mini oatmeal muffin cookies makes a perfect snack.
Ingredients

- Rolled oats– Using gluten-free oatmeal to make these mini oatmeal muffin cookies. Feel free to use instant oats as well.
- Oats flour– I dry roasted the rolled oats for 4-5 minutes on low heat. Once they are at room temperature I ground them to a fine powder. This is called oats flour. It helps in binding.
- Sweetener- Maple syrup provides the required sweetness. You can also use stevia or honey.
- Oil- coconut oil is my go-to oil when comes to baking. With healthy fats, it is a healthy substitute for any other oil. Feel free to use butter or olive oil.
- Roasted nuts– I am using pecans & walnuts for extra crunch.
- Chocolate chips– Using white chocolate chips. However, you can use any kind of chocolate chips for this recipe.
How to make Oatmeal Chocolate Chip Muffin Cookies
To make this mini oatmeal muffin cookies first I baked oats mixture in muffin liners.
Microwave till choco chips are melted. Added roasted nuts & mixed nicely. Spread 1-2 tsp mixture over oats muffins. Kept them for few hours to set the spread and muffin cookies are ready to serve.
So let see how to make this lip-smacking healthy snack mini oatmeal chocolate chips muffin cookies step by step.
- Preheat the oven at 350F or 180C.
- In a mixing bowl add rolled oats, oats flour, coconut oil, and maple syrup.
- Line a muffin pan with muffin liners. Pour 1.5 Tblsp or 2 Tblsp oats mixture in every muffin liner.
- Level each liner evenly and bake them for 12-15 minutes.
- Take them out after 15 minutes and let them come at room temperature.
- Meanwhile, prepare for the dry fruits spread. Dry roast pecans & walnuts on medium heat for 3-4 minutes. Let them cool down.
- In a bowl take chocolate chips and microwave until they are melted.
- Add dry roasted nuts in the melted chocolate chip. Mix it well and keep it ready.
- As soon as muffins cookies are cool down remove the muffin liner.
- Add 1-2 Tsp spread on every oats muffin cookie and let the chocolate mixture dry up.
- After a few hours when chocolate sets in mini oatmeal chocolate chip muffin cookie are ready to serve.
Serving suggestions
You can serve these oatmeal muffin cookie made with oatmeal in breakfast or afternoon snack.
These are also perfect for short trips & kid’s after school snack.
Storing suggestion
Once these muffin cookies are at room temperature store them in air tight container and keep at kitchen counter.
Tips & FAQ’s
- Let the chocolate dries up before serving.
- Store them in an airtight container after chocolate sets.
- These mini oatmeal chocolate chip muffin cookies make a great healthy snack. But still, be mindful while consuming.
- Kept their height only 6-7mm thick before baking, after baking it was below 15mm.
Use a normal muffin tin. You can spray & directly put the batter in it. Or place muffin liners and add the batter in them.
At room temperature cookies comes out easily without breaking. Just be careful and resist not to touch once they are out of the oven.
If placing the cookie batter directly in a muffin tin, make sure it is greased properly. Using muffin liner makes the process easy.
