Oatmeal Breakfast Bars (Peanut Butter & Pumpkin Puree)

Oatmeal Breakfast Bars are very good for breakfast or afternoon snack. These bars are filled with the goodness of oatmeal, flaxseeds, peanut butter, and pumpkin puree.

Being eggless, these healthy oatmeal breakfast bars are glutenfree as well, just a caution to use gluten-free oats. Better than packaged breakfast bars these homemade baked oatmeal bars are easy to make with pantry staples.

Homemade Baked Oatmeal Energy Bars

The natural sweetener like maple syrup or honey makes it guilt-free. They are refined sugar-free and make-ahead breakfast, snack & afterschool snack.

Using vegetable puree as one of the wet ingredients is a healthy substitute for oil quantity used in the recipe.

NOTE: This oatmeal flaxseeds breakfast bars recipe I noted down more than a year back when I used to search for healthy bakes. HAVE NO IDEA WHERE AND HOW I GOT THIS RECIPE, first published in feb2018.

Ingredients

  • Rolled Oats & oats flour – I am using a 50:50 ratio of gluten-free rolled oat and its flour. Just grind them into flour and use it.
  • Flaxseed powder– Using flax egg makes these bars egg-free.
  • Dry Ingredients– cinnamon powder, baking soda, a pinch of salt, & dairy-free choco chips.
  • Wet ingredients– Pumpkin puree, maple syrup or honey, oil, vanilla essence, water

For Peanut Butter glaze

  • 1 Tblsp peanut butter
  • 1 Tsp olive oil

How to make healthy oatmeal breakfast bars

  1. First of all, soak the flaxseeds powder in 1/4 cup of water for 10 minutes. This water quantity is adjusted from the listed ingredient list only.
  2. Sift together all dry ingredients in a bowl and kept aside.
  3. In another large mixing bowl combine all wet ingredients. In addition to this add flaxseeds mixture as well.
  4. Now add dry ingredients to wet ingredients and combine well. There should be no lump.
  5. Mix choco chips into the wet batter. (Before combining dry ingredients take 1 tsp of the flour. Choco chips should be rubbed with this flour. This helps choco chips not to sink in the wet batter.)
  6. Preheat the oven at 180 C.
  7. Grease a square pan and transfer the batter. Sprinkle some choco chips on top of it. Bake it for 30-35 minutes.
  8. Allow pan to cool down completely and then cut the squares.

For peanut butter glaze

  1. In a small bowl take oil and peanut butter. Microwave it for 2-3 minutes or till peanut butter is melted.
  2. Drizzle this on the top of the bar’s surface. Serve them with milk, a perfect snack oatmeal flaxseeds breakfast bars are ready to eat.

Storing suggestions

  • Room temperature– At room temperature, these bars are good for 24 hours. Since we used pumpkin puree, they required to keep in the fridge.
  • Refrigerator– You can keep these bars in a glass container and store for up to 6-7 days in the fridge.
  • Freezer– Store in the freezer-friendly bags and store for up to a month. Thaw overnight before using these. Reheat for 30 seconds before consuming.

Tips & FAQ’s

  1. Add cocoa powder if you like chocolate flavor.
  2. I used 1:1 quantity of rolled oats and oat’s powder.  Both ingredients can be used as a full quantity.
  3. Avoid peanut butter drizzling in case you do not like peanut butter. I avoid it now.
  4. With oats, these bars are denser. Let them cool down completely before cutting.
  5. Make sure to add rolled oats as they give chewy and dense texture.
Are breakfast bars healthy?

This really depends on many factors, types of ingredients used, type of diet, and nutritional values on the bars as per portion size.

Ingredients
