    Carrot dip is a delicious, super healthy dip with crackers and veggies. This is a gluten-free, vegan, sugarfree, dairy-free and nut-free dip. This carrot dip is creamy, smooth and soft in texture, goes very well with any starters/appetizers or salad. You can also serve this dip as a spread in pita bread or pita chips, or veggie sticks or any crackers.Carrot dip is a delicious, super healthy dip with crackers and veggies. This is a gluten-free, vegan, sugarfree, dairy-free and nut-free dip. This carrot dip is creamy, smooth and soft in texture, goes very well with any starters/appetizers or salad.

    After making this creamy carrot dip I realized, we can make a pumpkin dip as well just by replacing it with pumpkin. Very easy to make dip with just a few ingredients. Just gather everything in the grinding jar and blend till you get a smooth creamy consistency.

    • This dip is sugar-free, nut-free, vegan and gluten-free.
    • You can store in the refrigerator for 4-5 days easily.
    • Replace carrot with pumpkin to make pumpkin dip.
    • Instead of boiling roast carrots in the oven at 180C or 350 F for 40-45 minutes or till you get brown edges. Oven roasting will enhance the sweetness in carrots and give a caramelized flavor in the dip.

    Carrot Dip | How To Make Vegan & Gluten-Free carrot Dip

    Ingredient                                         1 Cup carrot Dip

    4 Medium size carrots
    2 Tblsp Olive oil
    ½ teaspoon salt
    3 teaspoon sesame seeds
    ½ teaspoon black pepper powder
    1 Garlic clove
    ½ Cup+3Tblsp water

    Method

    1. First of all, peel, clean and wash the carrot nicely. Cut them into 1" long pieces.
    2. Pressure cook it for 2 whistles. Release the pressure and transfer the boiled carrots in a plate. Let them cool down for a few minutes.
    3. In a food processor or grinding, jar takes all the ingredients along with boiled carrot and blend till you get a smooth paste-like consistency.
    4. Scrap down the jar whenever needed and blend. Serve at room temperature.
    5. Healthy and easy to make carrot Dip is ready to serve with salad sticks or with pita chips or with crackers. Enjoy.

    Note

    1. Roasting carrots before grinding will give extra flavor. I could not try due to time constraints.
    2. Replace carrot with pumpkin and a new dip is ready to serve.

    This month we have mixed results from all family members. My youngest brother-in-law became a father to a baby boy and now we are "bade mummy and bade papa" (taiji or aunty), that's what is called at in-laws family which I am loving the most. Husband has got few certifications, my son getting a good result in school (most surprising thing again after Pune). My daughter turned three this November.

    My son always says "mumma in school I give my personal best which I don't do at home" and now looks like this is the reason I don't believe in school's result. In all these happy moments we have some share of worries. My daughter caught some allergy or infection and we were treating her for cold and flu symptoms. After 2 days when things did not work out we went to the doc and got to know, it was an allergy. In my whole life, we never came across any allergy in our family. She is so irritated yet active, clingy, crying, dull, runny nose, watery eyes. Really heart sank on her birthday when she was not even able to open her eyes properly. Proper medication started and I wish her to get well soon.

      This is such a great dip to serve with crackers and also with veggie sticks. My boys love creamy dips with their vegetables and this will be something that they will really like.
