Ingredients

  • 1 cup Greek yogurt or thick curd
  • 1/2 cup water
  • 1/2 cup cucumber
  • 1/2 cup tomato
  • 1 tbsp green chili chopped finely
  • 1/2 tsp cumin seed powder
  • Salt as per taste
  • 2 tbsp Green coriander chopped finely

Instructions

  • First of all, whisk the thick curd or yogurt with water. This will make it creamy and smooth.

  • Now add chopped tomato, cucumber, roasted cumin powder, chopped green chili and salt as per taste.

Tips & FAQ’s
Being the simplest version of raita, still there are few things to take care of.
  • Use thick curd or greek yogurt to make creamy raita.
  • Adjust thickness by adding water.
  • If the curd is sour then replace water with the same amount of milk.
  • Use seedless cucumber. If not available then feel free to remove seeds from any available variety, if any.
  • Deseed tomato before adding in raita.
  • Serve chilled and fresh to get the best flavors of cucumber & tomato.
 
How long you can keep this raita?
It is best to consume fresh, but you can mix all the ingredients except salt and keep in the fridge for 1 day. Keeping for more than 1 day makes raita taste bitter.
 
Storing suggestions
How you can store raita depend on the duration. Normally kept for 30 min before serving, but you can keep it for 24 hrs in the fridge.
  • Fridge: you can store in the fridge for 24 hours. However not recommended. Tomato spoils the taste if kept for a longer duration. But otherwise, you can always make ahead, and keep in the fridge without adding salt.
