Cucumber Tomato Raita Recipe - Learn how to make this yogurt-based accompaniment using vegetables like cucumber & tomato in just 10 minutes.

You can make any vegetable Indian raita if you have a basic raita recipe. Having said that my go-to basic raita recipe is very simple, 1 cup thick curd or Greek yogurt, ½ cup water, ½ teaspoon roasted cumin powder, and salt as per taste.

Ingredients
Please refer recipe card with all measurements of the ingredients.
- Curd or Yogurt- You can use plain curd for this recipe. I am using greek yogurt to make raita. You can make it with homemade curd as well.
- Spices- salt as per taste and roasted cumin seed powder. Do not skip roasted cumin seed powder, it makes yogurt so flavorful.
- Vegetables- chopped cucumber, chopped tomato. I am using an English cucumber in this recipe.
- Chili- green chili chopped finely (optional)
- Garnishing- chopped green coriander
How to make cucumber tomato raita
Vegetable raitas are quick to make. Just add everything in a mixing bowl and adjust spices. That's all you need to do.
- First of all, whisk the yogurt and water in a mixing bowl. This will make yogurt creamy and smooth.
- Now add chopped tomato, cucumber, roasted cumin powder, and salt as per taste.
- Mix everything together and keep it in the fridge for 30 min.
- Garnish with green coriander before serving.
Variations
This is the simplest raita where you can easily do modification by adding or eliminating any ingredient.
- Cucumber Raita- Just use cucumber only to make creamy cucumber raita.
- Tomato raita- Using only tomato leads to lip-smacking tomato raita.
- Tomato onion cucumber raita- Add ½ cup of sliced onion to make another variation of yummy raita.
- Onion Raita- Just replace cucumber & tomato with sliced onion to make onion raita.
Serving suggestions
Yogurt or curd tastes great when chilled. Always keep raita in the fridge minimum for 30 min before serving.
This is best while serving with rice-based dishes like biryani and peas pulao(mater pulao).
Cucumber and tomato raita goes well with achari dahi bhindi (pickled okra with curd), Malabar parotta, Mint Paratha, achari besan paratha, & methi chi bhaji (yellow lentil with fenugreek leaves).

Storing suggestions
How you can store raita depend on the duration. Normally kept for 30 min before serving, but you can keep it for 24 hrs in the fridge.
- Fridge: you can store in the fridge for 24 hours. However not recommended. Tomato spoils the taste if kept for a longer duration. But otherwise, you can always make ahead, and keep in the fridge without adding salt.
- Refrigerate: Raita recipes are not for freezing.

Being the simplest version of raita, still there are few things to take care of.
- Use thick curd or greek yogurt to make creamy raita.
- Adjust thickness by adding water.
- If the curd is sour then replace water with the same amount of milk.
- Use seedless cucumber. If not available then feel free to remove seeds from any available variety, if any.
- Deseed tomato before adding in raita.
- Serve chilled and fresh to get the best flavors of cucumber & tomato.
It is best to consume fresh, but you can mix all the ingredients except salt and keep in the fridge for 1 day. Keeping for more then 1 days makes raita taste bitter.
This raita is best served with rice meals like vegetable biryani, dum biryani, green peas pulao. A great side dish with chole masala and aloo mater. Serve with carom seed flatbread, pudina paratha, onion capsicum paratha, spring onion paratha, carrot paratha.
