First of all, dry roast the 1 cup of peanuts. Make sure they don’t get burnt.
Let them cool down and then rub peanuts with your hands and remove their skin.
Grate jaggery and keep it aside.
In a grinding jar add peanuts and pulse for few seconds until you get a coarse powder.
At this stage add grated jaggery and again pulse for a few seconds. Scrap the grinding jar with a spatula and grind again for few seconds until the mixture looks uniform.
Transfer this mixture in a mixing bowl and add cardamom powder.
Shape them in small ladoo. There is no need to add ghee (clarified butter). Oil in peanuts helps to hold the mixture and making ladoos.
Peanut ladoo with jaggery or peanut ladoo is ready.

Tips & FAQ’s
Don’t grind peanuts in one stretch. Grind in pulses for a few seconds every time.
Run the grinder for a few seconds and stop. Check the mixture and grind again. Repeat this cycle until you get a uniform mixture.
Store them in an airtight container, peanut ladoos are good for a week.
If the mixture is dry or not binding into laddu shape then add 1-2 tbsp ghee. However, after grinding peanuts leaves oil and jaggery melts a bit, which helps in binding.
