16 Slices of multigrain bread (To make 8 mini bread disc pizza)
Cookie cutter
Instructions
In a mixing bowl add chopped bell peppers, olives, chopped tomato, chopped onion, grated cheese, seasoning, tomato sauce, green coriander, chili flake (optional) and mix well. This is going to be topping to fill the space. Be ready with cookie cutters and bread slices.
Take another bowl and add melted butter, grated cheese, and tomato sauce. Mix well and keep it ready. This spread work to stick another slice and the base of the toppings.
Now take a big cookie cutter (big enough to get the bigger circle from the bread slice) and cut all the bread slices to circle. Keep aside eight of the bread circles.
This time uses a smaller cookies cutter and cut the center of the remaining eight circles. We will use the circle ring not the inner part. (Here we are not using any leftover of the bread. Use them in making bread poha).
Spread butter on the round bread slices and put the ring on top of it. Just make sure bread ring stick to the round slice properly.
Add the vegetables filling inside the center of the ring up to the level of the bread. Sprinkle some grated cheese over it.
Repeat this with the rest of the round bread disc and rings.
Preheat the oven at 350F or 180C. Place all the bread pizza rings in a greased baking tray and bake for 15 minutes or till you get brown sides.
Mini bread disc pizza or cheesy vegetable disc is ready to serve with tomato ketchup.
Notes
Make bread poha using all leftover bread pieces.
Bread pizza can be made in the microwave too. Instead of cutting a ring, simply spread the butter and vegetables on the bread slices and microwave it for 10 minutes or until brown edges.
