Besan sev is a very famous snack prepared in every household kitchen in India. It is a blend of besan or gram flour and a few spices, which is deep-fried. They are crisp and savory in taste and a great tea time snack. This snack is made during Holi or Diwali, though you can cook throughout the year.
Using rice flour makes them a little softer as compare to using besan alone. Having besan alone makes them very crisp to bite.
Mix all the ingredients mentioned and form a dough using water. Keep it aside for 15 mins.
Quantity mentioned for the salt was good enough for me and used exactly 1 cup of water to knead.
To make sev you need chakli maker which is easily available in vessels shops or online like Amazon.
You can use any mold as per your choice with this dough. I used the one with many small holes.
Grease the mold from inside and fill it with the dough. It has to move round n round in circle and sev will start coming out of the mold. Deep fry them.
When they turn golden brown take them out on tissue paper, it will soak extra oil. Let them cool and then keep in airtight container.

Notes
You can avoid rice flour in a case to get the more crisp texture.
