First of all in a mixing bowl gather flour, dry fruit powder, baking soda. Combine nicely.
In a bowl add yeast, sugar, and salt. Add ¼ cup warm water and mix nicely. Cover it and keep it for 5 minutes. After 5 minutes yeast should be bubble up.
Now add this yeast frothy water, 2 tbsp oil, yogurt in dry ingredient. You need ¾ cup extra water to knead the dough. Knead till everything bind together nicely.
Apply little oil on top and cover with aluminum foil. Keep it in a warm place for at least one hour. The dough will double up in an hour.
After an hour punch the dough to release air and knead for a minute.
Divide the dough into equal parts. I made 6 parathas with this dough. Heat a griddle on medium heat. I used a cast iron pan to make this paratha.
Dust the rolling surface and roll into 5-6 ” circle. Transfer it to the hot griddle.
Cook for 1 minute and then flip it over. Cook again for 1 minute. After this transfer it to a plate.
Decorate one cooked side of this paratha with cheese, bell pepper, and green coriander. Now transfer this paratha back on the hot griddle. cook for 1-2 minute on low flame.
After 2 minutes transfer it to a cooling rack. Cut them into 6-8 pieces in triangle shape which will be like Christmas tree shape.
Insert an ice cream srtick and see how your little one happy to enjoy this xmas paratha.
