Gajar ka paratha or carrot paratha is a simple Indian flatbread which is healthy and delicious. Ingredients

  • 3 Cup whole wheat flour
  • 2 Cup tightly grated carrot
  • 2 Tsp grated ginger
  • 1 Tsp cumin seed powder
  • 2 Tsp salt (this was enough)
  • 2 Green chili fine chopped (used nonspicy green chili)
  • 1 Tsp red chili flakes (optional)
  • A handful of chopped green coriander
  • ¼ Cup water to knead
  • Oil or ghee (clarified butter) for cooking

Instructions

  • First of all, clean, wash and grate the carrot. Measure and then add in flour.
  • Take a big enough mixing bowl to accommodate all the listed ingredients. Mix thoroughly and start binding together.
  • Use water a little quantity at a time. Carrot will start leaving the water as we have added salt too.
  • It took around ¼ cup + 2-3 tsp of water to make a soft dough. Do not keep the dough for resting as carrot starts leaving water.
  • Heat a griddle on medium flame.
  • Divide the dough into equal parts. 14-16 parathas you can make with this quantity.
  • Roll out a portion in 6″ circle and place it on the heated griddle.
  • Cook on both side by applying oil or ghee. Cook until golden brown.
  • Serve hot this carrot paratha or gajar ka paratha with any of your favorite company like curd, pickle, tea or potato sabji and enjoy.

Notes

  1. Once you make carrot paratha dough, start rolling out parathas. Otherwise, carrot starts leaving water and dough becomes watery, difficult to handle.
  2. You can add onion too in the mixture.
