Ingredients

  • 1 Cup ragi (nachni flour or finger millet flour)
  • 1/4 Cup rice flour
  • 1/4 Cup semolina
  • 1 Green chili chopped finely
  • Handful green coriander chopped finely
  • 1/4 Cup chopped onion
  • 1 Tsp ginger freshly grated
  • 2 Cups water
  • 1/2 Cup thick curd
  • Oil for cooking

For Tempering

  • 1 Tsp oil
  • 1/2 Tsp cumin seed
  • 1/2 Tsp mustard seed
  • 10-15 Curry leaves chopped finely

Instructions

  • At first, take a mixing bowl and add ragi flour, rice flour, and semolina.
  • To this add chopped onion, grated ginger, chopped chili, and curd. Add 2 cups of water and mix well. Adjust water consistency as per requirement.
  • In a frying pan heat oil. Once the oil is hot enough add cumin seeds, mustard seeds, and curry leaves. Add this tempering to the mixture. Mix well and adjust salt as per taste.
  • If you find the mixture too thick add 1/2 cup extra water. Heat the griddle on medium flame.
  • Pour a ladleful dosa batter on the griddle. Sprinkle some oil on the top. Cook it for a minute. The flame should be low-medium at this time. Otherwise, dosa will burn.
  • It takes a minute to cook from one side, flip it over to another side and cook for few seconds.
  • Transfer it to a plate and serve with coconut chutney and coriander chutney. Instant ragi rava dosa is ready to serve hot.

Notes

  1. If you find dosa batter a bit thick then add extra 1/2 cup of water. It should have a pouring consistency.
  2.  Dosa will come out soft or crisp as per the thickness of the batter.
  3. Add any seasonal veggies to make it tastier.
