Ingredients

  • 2 Cup Besan/gram flour
  • 1/2 Cup rice flour (optional)
  • 1 Tsp carrom seeds
  • 1/2 Tsp turmeric powder
  • 1/2 Tsp baking soda
  • 1/4 Tsp Black pepper/white pepper
  • 2 Pinch asafoetida
  • 1 and 1/2 Salt or as per your taste
  • 3 Tblsp warm oil
  • 1 Cup water to knead
  • Oil for deep frying

Instructions

  • Using rice flour makes them a little softer as compare to using besan alone. Having besan alone makes them very crisp to bite.
  • Mix all the ingredients mentioned and form a dough using water. Keep it aside for 15 mins.
  • Quantity mentioned for the salt was good enough for me and used exactly 1 cup of water to knead.
  • To make sev you need chakli maker which is easily available in vessels shops or online like Amazon.
  • You can use any mold as per your choice with this dough. I used the one with many small holes.
  • Grease the mold from inside and fill it with the dough. It has to move round n round in circle and sev will start coming out of the mold. Deep fry them.
  • When they turn golden brown take them out on tissue paper, it will soak extra oil. Let them cool and then keep in airtight container.
  • Your tea time snack partner besan sev is ready to serve.

Notes

  1. You can avoid rice flour in a case to get the more crisp texture.
  2. You can use any mold with this dough.
