    You can have chocolate ganache or any frosting on a banana sheet cake and tweak the taste. But must say I finally found the best recipe to make an eggless banana walnut cake with whole wheat flour. However, you can always make this eggless banana sheet cake with refined flour.

    Thanks to Srivalli,s MasterChef theme. In this recipe,  made changes like whole wheat flour, flax egg, and coconut sugar and found my best eggless banana walnut cake recipe. I am on cloud nine now with this whole wheat banana cake. Well, you remember my strawberry brownie cribbing, can you imagine my kids and neighbor's kids loved it, well it got over now.

    How To Make Flax Egg?

    It is very easy to make a flax egg. Mix 1 tbsp flaxseed powder in 3 tbsp water and keep it for 5 minutes undisturbed. It will thicken after 5 minutes. This whole mix is the replacement of 1 whole egg. So if a recipe calls for 2 eggs then simply double it.This vegan banana walnut cake is soft, moist and with coconut cream frosting on top. I used coconut cream for the frosting to make a vegan version but you can experiment with cream cheese or chocolate ganache for the non-vegan version.     Vegan Banana Walnut Cake | Whole Wheat Banana Cake

    Ingredient                                                                      18-20 pieces

    1cup+¾ cup whole wheat flour
    ½ cup+1 tablespoon olive oil
    1 Cup coconut sugar (¾ cup refined sugar)
    2 Flax egg
    3 Overripe banana (1 Cup mashed banana)
    1 teaspoon baking soda
    1 Pinch of salt
    ¼ Cup roasted walnut chopped finely
    1 teaspoon cinnamon powder

    Coconut Frosting
    1 Cup coconut cream
    2 Tblsp maple syrup
    ½ Cup caster sugar
    Roasted walnuts to sprinkle

    Method

    1. First of all, prepare the flax egg. Add 2 tablespoon flaxseed powder in 6 tablespoon water and keep aside for 5 minutes undisturbed. Meanwhile, prepare for the batter.
    2. In a mixing bowl add whole wheat flour, baking soda, salt, and cinnamon powder. Sift 2-3 times so that flour becomes airy and combines with every ingredient very well.This vegan banana walnut cake is soft, moist and with coconut cream frosting on top. Made with whole wheat flour, spiced with cinnamon and chewy roasted walnut inside, this vegan eggless whole wheat banana cake is loved by all. Must say this is the best recipe to make an eggless banana walnut cake with whole wheat.
    3. Furthermore, prepare walnuts and preheating oven. Add roasted walnut in a small bowl with 1 tablespoon of flour and toss it.     7. Pour the batter in the greased pan and bake for 30 minutes.     9. Take the chilled coconut cream in a bowl, use the thick part, discard the liquid part. Add sugar and maple syrup. Beat with the electric mixer till sugar dissolve. It will not be like normal whipped cream. It has a soft peak.
    10. Spread it over the sheet cake and sprinkle some chopped walnuts. Best banana walnut cake or Vegan banana walnut cake is ready to serve.

    Note

    1. Replace whole wheat flour with refined flour. The texture will be different and cake will come out fluffy and light.
    2. Use normal refined sugar in place of coconut sugar, if required.
    3. Instead of a flax egg, you can also use eggs for the same recipe.
    4. For frosting use chocolate ganache or cream cheese frosting if required. I needed a vegan version which is why coconut cream is used.

      I still have yet to work with flax eggs, but I've heard that they are a wonderful vegan substitute for eggs. I love banana and the flavors in this look lovely. The perfect tea time treat!
