These days many fruit-based lassis are available which are easy to make at home. But this basic sweet lassi still works wonders.

In Punjab this is served in big glasses with parathas, having a layer of homemade butter on top of it. This buttery lassi is knowns as Makkhanya lassi.

What is Lassi

Lassi drink can be described as yogurt or curd whisked with some flavor (fruits, saffron or cardamom) and sweetener.

It is a yogurt or curd based refreshing Indian summer drink, prepared by churning homemade curd & flavoring like cardamom or saffron.

Traditionally it is prepared to beat curd in an earthen pot with a wooden whisk. Top it with some homemade “malai” (cream) and just relish.

I made this in the blender and added some milk to dilute it. You can add water too, also there is no cream or homemade butter in this lassi.

You can make sweet & salted lassi but the sweet version is more popular in all over the world.

Difference between Lassi and Buttermilk

Lassi & Buttermilk both are Indian summer drinks. Lassi is originated from Punjab, whereas Buttermilk is from Rajasthan & Gujrat.

Buttermilk is prepared with the leftover liquid after butter is churned out from the cream. Lassi is a purely yogurt-based drink.

Buttermilk is always salted and very thin consistency drink whereas Lassi is supposed to be thick, creamy & flavored with cardamom or saffron.

Indian sweet lassi ingredients
  • Yogurt– I am using greek yogurt to make Indian lassi. Normally plain curd is used to make Punjabi lassi.
  • FlavoringsCardamom or saffron strands are preferred to add while blending. I used cardamom powder to make this sweet lassi. (Saffron version also mentioned below the picture)
  • Garnishing– Chopped dry fruits like almond & pistachio are used for garnishing while serving
  • Other Ingredients- Ice cubes & water or milk

How to make Punjabi lassi

Lassi is one of the easiest summer drinks to prepare. You can make using a blender and also without a blender. Let see how to make lassi at home.

Step-1 Add all ingredients in blender

Add all the lassi ingredients in the blender

Take all ingredients listed (except “For garnish”), to a blending jar.

Step-2 Blend well

Pulse for few seconds and Indian lassi is ready to serve.

Pulse for a few seconds till it becomes frothy.

Step-3 Serve chilled

Serving suggestions

Due to its cooling properties it is prepared more often in summer season. But you can make anytime during the year.

It is best served after spicy meal to balance the heat. But you can take it any time during the day.

Palak paneer, sarson da saag, alu matar, alu gobi gravy are few main courses which go well with sweet Punjabi Lassi.

Storing suggestions

Though it takes only 5 minutes to make sweet lassi. Still you can make ahead and store in the fridge for 6-7 days.

Variations

You can make a variety of sweet lassis by adding different fruits like strawberry, mango, banana and any other sweet fruits.

Adding rose syrup will make rose lassi, don’t forget to add chopped dry fruits while serving.

You can make chocolate lassi by adding chocolate syrup.

Adding strawberries will make strawberry lassi.

What is curd & buttermilk?

Curd and buttermilk both are used in Indian traditional recipes. In India we call curd instead of yogurt.

Buttermilk is the left water after butter is extracted from the cream.

Ingredients

  • 1.5 cup greek yoghurt you can use regular curd as well
  • 1 cup water you can use milk too
  • 4 tsp sugar powdered
  • 1 tsp cardamom powder
  • Few ice cubes
  • 1 tbsp pistachio and almond for garnishing
