    Strawberry Avocado Spinach Salad Recipe | Summer salads

    This strawberry avocado spinach salad packed with healthy fats and loads of nutrients. Strawberries are a great source of Vit C, K folate, potassium, manganese, and magnesium but also low in calorie and fiber-rich fruit. It is full of antioxidants properties too.     Avocado is a pear-shaped fruit with a rough leathery skin, smooth oily edible flesh, and a large stone. They have high fatty acid content but low level of cholesterol. Avocado considered to be a good fat for the body. They also contain minerals such as vitamin C, B6, B-12, A, D, K, E, thiamin, riboflavin, and niacin. Furthermore, they are a great source of dietary fiber, and a single serving can provide more than 40% of the daily requirement!     My husband loves salads in his meal whereas I am just the opposite. I can cut and cook. But when it comes to the salad I feel lazy to cut veggies or fruits depending on what salad I am preparing. When I joined BM again I chose salad theme purposefully, so that I can help myself to make different salads and serve.  I love greens like baby spinach and lettuce. When I saw this recipe, immediately I made it and serve to kids and husband. It was really delicious and we all could finish the whole box full of strawberry in this salad. Though my little girl did not like eating baby spinach and my son did not love feta cheese.

    Cut strawberries with some spinach, avocado, few nuts for crunch, and some feta cheese, toss them all with dressing. With juicy strawberries, crunchy nuts, tangy feta cheese and with greens your healthy salad is ready. I did not have all the ingredients for the dressing mentioned in the original recipe. So added storebought balsamic vinegar dressing. The taste was still great.

    Strawberry Avocado Spinach Salad

    Ingredients                                                                                   4 servings

    2 Cup halved strawberry
    1 Medium size avocado
    2 Cups tightly packed baby spinach
    2 Tblsp silvered almond (You can use walnut or pecans too)
    ¼ Cup feta cheese crumbled
    3 Tblsp balsamic vinegar dressing (I used readymade)
    1 Tblsp cottage cheese (optional)

    Method

    1. Toss all ingredients together dressing until combined.
    2. Serve this crunchy juicy strawberry avocado spinach salad immediately.

    Notes
