    Soya-Methi Ki Sabji/Fenugreek-Dil Leaves Curry

    My mother in law is very fond of green vegetables. As soon as winter starts she ask to buy greens and cooks. Her cooking is perfect. Anything she can make look good and taste awesome. I learnt this recipe from her. It taste so heavenly that I really cant resist myself for not cooking it. Very easy and simple dish. Now my both kids loves this combo too. Every time I cook it my son demands for more and my daughter loves it with curd. Makes me feel good. Having rich in iron and minerals it is very healthy too. So friends make your winter lunch or dinner with my super healthy recipe.

    Ingredients: Sufficient for two people


    1 Bunch of fenugreek leaves
    1 Bunch of dil leaves
    1 teaspoon fenugreek seeds
    1 Cup chopped onion
    1 Cup chopped potatos
    10-12 garlic pods chopped finely
    Salt as per taste
    oil for cooking

    Method: Wash fenugreek/methi & dil/soya leaves 2-3 times in water. This is very important process as it contains lots of dirt. Chop them finely and keep aside.

     

    Heat 2tblsp oil in a pan, when oil is ready add fenugreek seeds, let them crackle. To this add chopped garlic and fry till its raw smell goes away. To this add chopped onion and fry till its color changes to golden. Add potatoes, cover the lid and cook it till potatoes half cooked. Add a little salt to fasten the process. Now add chopped fenugreek/methi and soya/dil leaves and cook. Don't cover the lid. It turns to black in color if greens are cooked in covered pan. It will start leaving water which will help to cook potatoes. Once potatoes are cooked switch off the flame. Your soya-methi sabji is ready to serve with chapati.... mmmm mouth watering... it is too yummy.
