Sooji Mawa Ladoo | Rava Khoya Ladoo

Ingredient                                                                     10-12 Ladoo

1 Cup sooji or rava or semolina
1 Cup Powdered Sugar
1/2 Cup ghee or clarified butter
1 Cup Mava
15-20 Cashew chopped
1 Tsp cardamom powder

Method

  1. First of all, we need to roast sooji. Heat a heavy bottom pan on low flame and add half quantity of ghee.
  2. Once the ghee is melted add suji and roast till sooji becomes golden brown in color.
  3. Transfer it to a mixing bowl to cool down.  Add crumbled khoya in the same pan and roast it till slightly golden color. It takes around 10 minutes.
  4. After 10 minutes transfer it to the same mixing bowl. Combine sooji and khoya nicely.
  5. Let it come to a temperature where you can touch it. Do not add powdered sugar in the hot mixture. It will melt if mixed in hot mixture.
  6. As the mixture is warm, add cardamom powder, powdered sugar, chopped cashew.  Mix everything together and finally add the rest of the ghee quantity.
  7. Start shaping them in ladoo and sooji mawa ladoo or rava khoya ladoo is ready to enjoy.

Note

  1. Sooji and khoya should be roasted on low heat. They should not burn.
  2. Add powdered sugar only after the mixture is cool down. 3-5 minutes are enough to make temperature down.
  3. Shape them quickly until the mixture is warm.
  4. If you want to reduce the ghee quantity then replace it with milk. But then shelf life will reduce.
  5. Store them in an airtight container for good two weeks.

Oh wow tha addition of khoya will definitely give it a richer and melt in mouth taste consistency. Next time when I’m making rava ladoo, I’ll remember to add Khoya.
