    Pea, Paneer And Mint Frittata/Pizza - Blogging Marathon #82

    I saw this recipe a newspaper. I added carrot & spinach just to add colors in frittata. This is good to make in oven. I had to buy a pan for it to make as I don’t have oven at my home. Though it was a tough time for me to flip on other side J. Somehow I made it to cook from other side with the help of other pan J. But after seeing final outcome I felt sooooooo happy. It is something which I never cooked. It looked like a pizza and taste was too good. Try this friends you will love it for breakfast recipe.

     

    egg frittata with vegetables
    Ingredients Sufficient For Two
    3 Eggs
    2 Medium sized onion finely chopped
    3-4 Green chilies finely chopped
    1 Carrot grated
    2 Fistful green peas
    1 Fistful spinach finely chopped
    2 Sprigs mint leaves finely chopped
    Salt as per taste
    Black pepper as per taste
    1 Cup salted paneer or 2 Tblsp cheese
    Olive oil to cook
    Peas, Paneer & Mint Frittata
    Method: Break the eggs in a wide serving bowl and whisk well. Add salt as per taste.
    Heat the olive oil in a non-stick pan and cook onions until it softens and becomes golden in color. To this add grated carrot, peas, green chilies, mint leaves and cook for about 5 min. Peas and carrot should be cooked before adding eggs. Now add salted paneer, spinach & black pepper. Sprinkle salt as well as per taste. Cook for another 2-3 min.
    Since I am making it in a non-stick pan so before adding egg mixture it is desired that pan should not be hot. Otherwise it will become like a omlette. After few min when pan become cold comparatively add beaten egg. Mix it well and set it properly in the pan. It will be a thick layer now in the pan. Now you make out why did I mention to make cold this pan. Now keep this on low flame and cover it with the lid. It takes around 2-3 min to cook from one side. You will see a little liquividy from upper side, so it will be like that when it is cooked in a pan. You have to flip it on other side to cook it.

    It’s a good idea to make this in a oven J. There you don’t have to flip J). Again cook for 2-3 min. Serve in a plate and have it in your breakfast. It is sooo good in taste mmmm while writing this I am remembering my experience J.

      That is a great choice for breakfast. We don't eats eggs as is but lately have been making some boiled eggs for my boys. They want some variety now and this is something I can make.
