    Papchi is a traditional sweet snack from Chhattisgarh made with whole wheat flour and coated with sugar syrup.

    It is a sweet snack with wheat flour to make on festivals and a great snack for kids' tiffin boxes.

    Chhattisgarh is a state located in the center of the country surrounded by Maharashtra, Telangana, Odisha, Jharkhand, And Uttar Pradesh.

    Chhattisgarh cuisine bound to share a similarity in cultures and food. Papchi looks similar to shakarpare, but with a disc shape.

    Most of the food items prepared using whole wheat flour & rice flour.

    They are sugar-coated but you can also use jaggery to coat them.

    Some of the famous food of Chhattisgarh are Chousela, Chilla, Dahi bara, Farra, Curries like rice dumpling curry, bara/vada curry, potato, and drumstick curry, yam curry to name a few.

    This sweet dish from wheat flour 'Papchi' is adapted from my blogger fellow Amrita. It is "Papchi" a whole wheat flour sweet snack.

    Making with whole wheat flour makes this sweet easily digestible as compared to refined flour.

    Ingredients

    • Flour- The best part of Papchi is, it is made with whole wheat flour with some quantity of rice flour.
    • Sweetener- Sugar is preferred to coat the papchi disc for authentic taste. However, you can use jaggery as well.
    • Oil/Ghee- Ghee is added in the dough to make them a little crispy. Oil is for deep frying. You can see how to make homemade ghee.
    • Other ingredients- Salt, water to knead the dough
    • Flavorings- cardamom powder, kewra essence

    How to make famous sweet from Chhattisgarh 'Papchi'

    To make papchi whole wheat flour, rice flour is combined with ghee (clarified butter). Make a soft dough using water. Roll out and cut disc shape with a cookie cutter or using any bottle cap. Deep fry this disc and coat with sugar syrup. So let see how to make the whole wheat flour sweet snack papchi.

    1. First of all, take a mixing bowl and add rice flour, whole wheat flour, salt, and ghee. Mix well and rub the flour within your palms.
    2. Once everything combined well then flours should be clamped in your palm. Take a fistful of the mixture and close tightly.     3. Now start adding water 1 tablespoon at a time and make a soft dough. Keep it aside for 15 minutes.
    4. Heat oil in a kadhai on medium flame.
    5. After 15 minutes knead the dough again. Divide it into two equal portions.
    6. Roll out one portion into a big circle. It should be thick like 4mm. With the help of a cookie cutter or a bottle cap cut out a small disc from the rolled dough.
    7. Re-roll the trimmed dough and cut the disc. Repeat this process until all the dough is used into making the discs. I made 40 pieces using cookies cutter (smallest cutter).Papchi is a traditional sweet snack from Chhattisgarh made with whole wheat flour and coated with sugar syrup.     8. Make an impression using a fork on both sides on discs. This will help the disc not to puff up while deep frying.
    9. Deep fry them on medium flame. Do not fry on high heat as they will be raw from inside. To cook properly papchi needs a temperature from medium to low.
    10. Fry all the discs and drain them on paper towels.

    To make sugar syrup

    1. Heat sugar with ½ cup of water on the medium flame.
    2. Within 5 minutes sugar will dissolve and start bubbling. We need one string consistency syrup.Papchi is a traditional sweet snack from Chhattisgarh made with whole wheat flour and coated with sugar syrup. Papchi makes a great snack to make on festivals and a great snack for kids tiffin box.
    3. Add cardamom powder and kewra water. Mix well. Take a spoon and drop a little syrup on the surface. let it cool down a bit and check between your fingers if it makes one string. That is the time when sugar syrup is ready to use.
    4. Gently slide the papchi disc into the syrup and flip them. As soon as they are coated with syrup remove them on a greased surface.

    Ingredients

    For the Dough

    • 1 cup whole wheat flour
