These no-bake date energy bar are loaded with natural ingredients like dates, walnut, almonds, and nuts like pumpkin seeds and sunflower seeds. Being no-bake, they require very less time to prepare. Just get all ingredients in a food processor, pulse them for about 1-2 minutes and set them in a baking pan. Leave them overnight in the fridge to set in and cut them in the desired shape.
Dates are a good source of vitamins, minerals, fiber, calcium, potassium and much more. Eating them every day helps to meet our daily requirement of vital nutrients. No-Bake Date Energy Bar
Ingredient 8-12 bar
2 cup dates seeds removed( I used mejdool date)
1 cup walnut
½ cup almond
½ cup grated coconut
A pinch of salt
½ cup mixed seeds like sunflower and pumpkin
Method
- First of all, clean the dates and remove seeds.
- In a food processor add walnut, almond, and coconut. Pulse for 10 seconds. Repeat this until dry fruits are broken into pieces.
- To this add seeds and dates. Pulse for 20 seconds. Repeat this for 2-3 times till dates are crushed and mixed with dry fruit mixture.
- Line a parchment paper in a baking pan or in a plate.
- Pour this mixture in the pan and set it with the help of a spatula. Spread some seeds on top. Set them and keep in the fridge until they firm.
- Cut them into the desired shape. No-bake date energy bar ready to serve with milk in the breakfast time or snack time.
Note
- You can use figs or apricot also to make such nut bars. Again there is no need to add any liquid ingredients.
- Mix and match dry fruits as per availability. A new combination will come out.

After making them I keep these no-bake bars in my fridge. Noticed that for a month they are good in taste and texture if kept in the fridge. Since we are a family of four, so last only for two weeks. I keep them in the kitchen shelf.

The flavour is delicious! I’m a huge fan of dates so having these bars is a guilt free way into tricking myself that I’m having dessert! I left mine overnight and they didn’t set properly and just crumbled but from reading your previous reviews and comments, I really think the problem was that I didn’t use medjool dates. I’ll be sure to use those for the next batch..

You can simply eliminate nuts and keeping rest of desired ingredients as it is. Medjool dates are soft and moist while grinding they work as a binding agent and combine. Rest process is the same. Hope this helps.

I've tried your vegan bars, unfortunately after a night in the fridge, they still didn't keep together as a bar, but fell apart. I have added all the ingredients but nothing helps! can you tell me if I forgot to do something.
I still ate them with a spoon, but I was so eager to add them to my lunch.

Thanks for trying the recipe. Sorry to hear that it did not turn out well.
The only trick is using Medjool dates. They are soft, tender, and moist. While grinding they are the one who act as a binding agent and helps in combining everything. I hope you are using the same dates.
I got a big packet of Medjool dates from Costco, Austin. Apart from this really have no idea what could go wrong.

Carol, these are no bake version. Cooking dates will be more sticky as you may have to add some liquid ingredient to moist further.
