Mooli Paratha (Stuffed Radish Flatbread)
Mooli paratha or radish paratha is an Indian flatbread stuffed with grated white radish. Stuffing is spiced up with few spices and makes a wholesome meal for breakfast, lunch, or dinner.
Mooli ka paratha is slightly difficult to make as compared to other stuffed parathas like matar paratha, aloo paratha, gobhi paratha, paneer paratha & achari besan paratha. Let see how to make it step by step.

Radish is a root vegetable. Leaf, green part, and the roots all are used in cooking, especially with additions like spinach. Just wash them well and cook with spinach.
Root and leafy green both are also cooked together and dry mix veg is ready to serve. Add in palak paneer and Sarson ka saag. You can make mooli raita, pickled radish, and Mooli relish as well.

Radish paratha is another delicious, healthy, lip-smacking breakfast recipe in winters especially. Sarson da saag, peanut chikki, peanut laddu, til khoya laddu, gond ke laddu, and carrot halwa, are few delicacies to enjoy in this weather.
It makes a perfect weekend brunch or dinner recipe. To make dhaba style mooli paratha add few more spices like, chat masala, anardana powder and finely chopped onion.

In grated mooli, we add green chilies, green coriander, garam masala, and carom seeds added. With minimal spices, radish flavors come out and this healthy paratha tastes great.
It is a bit task to make this bherwa paratha, as radish filling tends to get watery due to high water content in radish.
You can make muli paratha in two ways. Knead the dough with all ingredients together and make a soft dough. Make parathas with it. This is the best way to make mooli paratha for a beginner.
OR squeeze out grated radish to remove access water, add other filling ingredients and then stuff it. I am showing you how to make mooli parathas with stuffing mooli.
To get rid of access water, first grate the radish and add 1-2 tsp salt. Cover it with the lid and set aside for 15-20 minutes. Due to salt it will start leaving water. After 15-20 minutes, squeeze as much as possible and then use.

For Filling
- Mooli or radish– Seasonal radishes taste great in this stuffed paratha as they are soft, less fibrous, and mild in taste.
- Ajwain seeds (carom seeds)– these are added to help with digestive issues.
- Salt
- Red chili powder
- Green chili chopped
- Garam masala
- Green coriander chopped finely
For Dough
- Wheat flour
- Ghee or Oil
- Salt
- Warm water
You can replace whole wheat flour with makki ka aata (cornmeal) and prepare mooli makki ka paratha.
How to make mooli ka paratha
This Indian paratha can also be made if you mix everything together and then make it. For anyone who starting out to make parathas, it is a beginner-friendly method.
I am sharing a method where grated mooli is stuffed in the dough. Let see how to make mooli ka paratha step by step.
Prepare the dough
Take the wheat flour, oil, salt in a mixing bowl, and combine very well. Knead a soft dough by gradually adding warm water. Keep it covered until stuffing is getting ready.
This will make the dough soft and smooth. It helps while rolling out paratha. You can make stuffed parathas without stuffing coming out if the dough is soft enough.
Prepare mooli stuffing
- Peel and grate the radish(mooli) using a grater. Add some salt to it, mix and keep aside for 15-20 mins. It will help in releasing water out of the radish.
- After 15 minutes you will notice a lot of water around the grated radish. Rinse all the water from it and squeeze further in order to get rid of the excess water.
- Mix all rest dry ingredients to it. Your filling is ready to stuff. Divide it into equal portions.
Rolling Paratha
- Divide dough and stuffing into equal portions. With this much quantity of ingredients, I could make 7 parathas or flatbread.
- Dust the rolling surface and take one portion. Roll out a circle of about 3″ in diameter.
- Place one portion of the mooli stuffing mixture in the middle and gently seal it by bringing all edges together. Pinch it using both hands.
- Roll it gently by putting little pressure. Use a circular motion around the center and roll.
- Do not worry if stuffing comes out. Just fix and roll further.
Cook paratha
- Now heat a griddle and transfer this rolled paratha onto Tawa. Cook for 1-2 minutes or until you see small bubbles forming up.
- Flip it on another side and cook for 30 seconds. Apply oil on this side and flip it again.
- Cook from both sides until brown in color. Repeat the same with other dough balls.
- Stuffed Mooli ka paratha is ready to serve hot.
Serving, Storage, & Reheating
Serve them with homemade yogurt or pickle. Try these hot parathas with masala chai or simple cardamom tea.
Plain homemade yogurt, boondi raita, lauki raita or cucumber tomato raita or carrot raita make a perfect side dish for stuffed muli paratha recipe.
You can serve stuffed radish paratha with green chutney and peach chutney as well.
Pair it with mango raita, sweet lassi, strawberry lassi, and mango lassi, to balance the heat.
You can store them in a container for 24 hours. In the fridge they are good for 3-4 days.
Microwave these mooli parathas for 30 sec to 1 min.
Tips & FAQ’s
- If you want to make stuffed mooli paratha then squeezing extra water is very important. Else it will not be easy to roll out parathas.
- Radish stuffing can not be prepared in advance. It starts leaving the water after contacting with other ingredients.
- Make all parathas at the same time else radish filling will become soggy and you can not roll parathas further with ease.
- The squeezed water can be used for kneading the dough. or you can discard it.
- For any beginner, please mix all ingredients together and prepare the dough. Now make parathas with this dough.
- Replace wheat flour with makki ka aata and knead a soft dough. This will make makki mooli ka paratha and goes very well with palak paneer.
