My husband likes noodles very much and keep buying different kind of noodles time to time. Recently we bought spaghetti noodles which he used to make pasta and like very much. Where as pasta is not my type of dish :). I had a magazine where so many noodle recipes were given so thought of making one of them. I am making some modifications to the original recipe but posting in my blog so that rest of the bloggers get to know about it :D. Though it is very similar to lemon rice. But I bet you will love this version of spaghetti (noodles) more. As such there is no comparison between lemon rice and lemony spaghetti (noodles). But believe me so far with in a month I made this 3 times :). Just toooooooooooo Gooooooooooood toooooooooooo eat :)).
Ingredients : Serving For 2 People
1.5 Cup spaghetti (noodles)
1 Medium sized onion finely chopped
1 teaspoon mustard seeds
10-12 Curry leaves
1 Fistful peanuts (you can add more)
½ teaspoon turmeric
A pinch of asafoetida
2 teaspoon green chili chopped
1 teaspoon urad dal
1Tsp chana dal/bengal gram dal
Oil to cook
Salt as per taste
2 Tblsp lemon juice
Grated coconut to garnish (optional)
Method: Before any preparation just soak urad and gram dal for sometime. Boil the spaghetti (noodles) in water. Once they are cooked properly put them under running cold water for 2-3 minutes and drain all the water. Add 1 teaspoon oil to the boiled noodles. This is done so that they dont become sticky. Keep them aside till the masala is ready.
Now heat oil in a pan and add curry leaves, mustard seeds & asafoetida. Once seeds start spluttering add chopped onion and fry until its color changes to golden brown. To this add soaked dals/lentil, peanuts and green chilies. Fry them for about 4-5 minutes until this becomes golden in color. After that add turmeric powder and salt as per taste. Finally add boiled spaghetti (noodles) and mix well. Stir it on the low flame for 2-3 min. Add lemon juice and mix well. Lemony Spaghetti (Noodles) is ready to eat now :). Serve hot and garnish it with grated coconut if you like :).
