Lauki ki sabji or lauki tamatar ki sabzi is easy and simple curry to make for lunch or dinner. It is an integral part of the Indian kitchen due to its health benefits especially in the Northern part of India. I love veggies like bottle gourd, ridge gourd, bitter gourd. These vegetables are so versatile in terms of cooking that a slight change in cooking style gives you a different result every time. Lauki or bottle gourd is a blend and tasteless vegetable that is the reason this lauki tamatar ki sabzi is a bit spicy and taste amazing.

What Are The Benefits Of Lauki or Bottle Gourd?

Bottle gourd is a great healthy and nutrients rich vegetable. It helps in digestion and promote weight loss. It consists of 90% of water content due to which it helps to keep the body cool in summer and also cures diarrhea. How To Cook Lauki or Bottle Gourd Vegetable?

By nature, bottle gourd is very blended in taste due to which kids and adults do not like it much. To make it tastier addition of spices are a must. Adding tomato gives a tangy and delicious flavor to the gravy. Lauki is used to prepare a variety of recipes like lauki ki kheer, lauki thepla, lauki ka halwa, lauki ki burfi, lauki raita, lauki paratha, lauki kofta curry, lauki alu ki sabji. Also combining with different lentils results in amazing lentil curries like lauki with chana dal, lauki with yellow lentil. Somehow this vegetable has been in my favorite list of vegetables.

I used a stove top pressure cooker to make this doodhi ki sabzi. By all means, this lip-smacking curry can be prepared in Instant pot too. Bottle gourd is a must have vegetable after childbirth as it is easy to digest and light vegetable. Adding ghee (clarified) makes it tasty too as the new mother needs the nutrition. However, it is totally optional.

Can I Cook Lauki Tamatar Ki Sabzi In Instant Pot?

Yes, this delicious curry/gravy recipe can be cooked easily in instant pot. Saute onion, tomato with rest of ingredients and add chopped bottle gourd. Pressure cook it for 5 minutes and let naturally releases the pressure. Garnish with chopped coriander and serve with any Indian flatbread and rice. How To Make No Onion No Garlic Lauki Ki Sabji (satvik sabji)?

To make lauki sabzi I have used onion and garlic. You can eliminate these two ingredients and make no onion no garlic lauki ki sabji. During fasting, lauki is also consumed by some families as per tradition, during fasting days no onion, no garlic dishes are a must.

Lauki Ki Sabji | Lauki Tamatar Ki Sabji Recipe

Ingredient                                                        4 Servings

1 medium size bottlegourd chopped
1.5 Cup water
1 chopped tomato

For Tempering
1.5 Tblsp vegetable oil
2 medium size onion chopped
1 Tsp cumin seeds
A pinch of asafoetida
1 Tsp ginger garlic paste
2 green chili
1 Tsp kitchen king (garam masala)
1 Tsp Turmeric
1/4 Tsp chili powder
Salt as per taste
Green coriander chopped finely

How To Make Lauki Ki Sabji or Lauki Tamatar Ki Sabzi

  1. First of all, clean wash and chop the bottlegourd. Boil the chopped bottlegourd with chopped tomatoes and 1.5 cups of water. 4-5 whistles are enough to cook them nicely. Let it sit for sometime till pressure goes down.
  2. Meanwhile, prepare for tempering. Heat oil in a pan on medium heat.
  3. When the oil is hot enough add cumin seeds.
  4. Once cumin seeds start spluttering add ginger garlic paste. Fry this until the raw smell of garlic goes away.
  5. To this, add chopped onion and fry them till they become golden brown.
  6. Now add all dry spices listed one by one, mix well.
  7. Finally, add the boiled bottlegourd and cook for another 5-6 min.
  8. Garnish it with green chopped coriander and serve with chapati/paratha and rice.
  9. Enjoy this finger-licking simple yet tasty lauki ki sabji or lauki tamatar ki sabji.

Note

  1. Adjust spices as per taste. For me, this measurement was good enough.
  2. If you need dry version then don’t add water, simply add chopped bottle gourd and cook by covering the lid.
  3. You can add chopped potatoes as well then lauki alu ki sabji will be ready.

    I use to hate this vegetable as a kid but had to eat it. Loved your version of adding tomatoes to the sabji, must have given an awesome taste.

  2. Lauki ki sabzi is one of the most cooked veggies in our house . I cook this veggie almost in the same manner except for the onion . The sabzi looks wonderful , and makes a perfect meal with rotis .
