Kuttu ki Tikki or buckwheat cutlet is healthy, easy to cook, and filling cutlet recipe during the Navratri festival. It is gluten-free, dairy-free, and vegan. These cutlets are nutritious and a great snack choice for no-fasting days.

Buckwheat cutlets during fasting days

Kuttu or buckwheat flour is consumed mostly during Navratri fasting days in India.

A lot of dishes prepared using this like kuttu ka paratha, kuttu ka pakora, kuttu ki poori. Today I am sharing a cutlet recipe from my fellow blogger friend Sujata from “Batter Up With Sujata” for recipe swap event. 

She has used sama rice in her recipe, I added kuttu flour to make these cutlets as sama rice quantity was not enough while making these cutlets.

Buckwheat benefits

Buckwheat or kuttu is a nutrient-packed flour, high in protein and fiber. It is a great antioxidant, controls cholesterol, and provides essential vitamins and minerals.

Buckwheat flour is low in glycemic index, due to this it is easy to digest and good for diabetes.

Why you will love this recipe

These buckwheat cutlets or buckwheat potato croquette are very easy, simple and quick recipe to make with pantry staple ingredients.

Buckwheat or “kuttu” is consumed during fasting days especially on Navratri fasting days.

It is light on the stomach and gluten-free. With peanuts, these patties are crunchy & nutty in texture.

Ingredients

Buckwheat patties are really easy to make with available pantry ingredients.

Please refer recipe card for details ingredients list with measurements.

  • Kuttu or buckwheat flour– the star ingredient is buckwheat flour.
  • Potato– they help in binding the flour together.
  • Peanuts– adds crunch in every bit.
  • Sabudana or tapioca pearls– adding tapioca pearl helps in binding the dough and keep it smooth.
  • Spicescumin seed powder, coriander powder, red chili powder, sendha namak (fasting salt), dry mango powder
  • Garnishing– ginger, green chilies, green coriander leaves

How to make kuttu ki tikki

So let see step by step how to make this delicious, crunchy, and a great snack Kuttu ki Tikki or Buckwheat Cutlet Recipe or Buckwheat Potato Croquette.

  1. First of all, soak sabudana for 2 hours at least. That again depends on which size sabudana you are using.
  2. Meanwhile, boil potatoes. Peel and mash them, keep it aside.
  3. Dry roast peanut and coarsely ground them.
  4. As sabudana is ready, combine all ingredients together in a mixing bowl. Adjust salt as per taste. You do not need water to combine, sabudana and mashed potato have enough moisture to make a soft dough.Kuttu ki Tikki or buckwheat cutlet is a healthy, easy to cook and filling cutlet recipe.   5. Divide this mixture into equal parts, I could make 16 tikkis with this mixture.Kuttu ki Tikki or buckwheat cutlet is a healthy, easy to cook and filling cutlet recipe.   6. Shallow fry the tikkis in little ghee or clarified butter. You can use oil too.

  8. Kuttu ki Tikki or buckwheat cutlets are ready to serve hot.

Chutney

  • 1 Cup tightly packed green coriander leaves
  • 1 Green chilies
  • 2 Tblsp lemon juice (adjust as per taste)
  • 2 Tomatoes
  • 1″ Ginger
  • Sendha namak as per taste

Take everything in a grinding jar and grind till you get a smooth consistency. Adjust salt and lemon juice as per taste. Vrat ki green chutney is ready.

Variations

You can also use sama rice flour, Amarnath flour, or rajgira flour to make these cutlets.

Just replace kuttu ka aata with the above-mentioned flours and follow the rest of the process.

Serving suggestions

Buckwheat cutlets are best served with chutney or homemade plain curd. You can check green chutney & imli chutney as well if it is allowed at your place.

Storing suggestions

These are best to serve fresh.

Refrigerator– You can prepare the dough and patties. Store these patties in an airtight container and can keep in the fridge for 4-5 days.

As required just take out from the fridge and either shallow fry or deep fry them. Serve hot

Freezer- If required you can store these patties in freezer-friendly zip lock bags and keep in the freezer.

Thaw before using these patties. Cook as per requirement and serve hot.

Tips & FAQ’s

  1. If the dough is not coming together then use little water. I did not use any water.
  2. These cutlets make a great substitute in burger patty. Kids love having it without compromise on taste in no-fasting days.
  3. These gluten-free flour can also be used on normal days as it is very nutritious.
How to make vrat ki tikki?

Use fasting flour with boiled potato, roasted peanuts, soaked sabudana, green chili, green coriander, cumin seed powder, and salt. Combine everything together without using water and make a dough. Divide it into equal pieces and pan fry them from both sides.  You can deep fry them as well. Serve them with vrat ki chutney.

How to make sama ke chawal ki tikki?

Replace kuttu flour (buckwheat flour) in these recipes and make your favorite sama rice ki tikki.

Ingredients

For patties

  • 8 Medium sized potato

  • 1 cup buckwheat flour (kuttu ka atta)
  • 1/4 cup roasted peanut
  • 1 tbsp grated ginger
  • 2 Green chili chopped finely (as per taste)
  • 1 tsp cumin seed powder
  • 1 tsp coriander powder
  • Sendha namak as per taste
  • 1 tsp red chili powder (optional)
  • 2 tsp dry mango powder
  • Ghee for pan frying feel free to use oil as well
  • green coriander chopped finely

Chutney

  • 1 cup green coriander leaves tightly packed
  • 1 Green chilies
  • 2 tbsp lemon juice (adjust as per taste)
  • 2 Tomatoes
  • 1" Ginger
  • Sendha namak as per taste

  1. Kuttu ki cutlet looks really healthy and very filling during fasting times. My mom used to make same kuttu ki cutlets during navaratre times but never added sabudana in it. That’s a very clever idea. Beautiful share Bhawana.
