Already soaked chia seeds in coconut milk, mixed with kiwi fruit either chopped or pureed, topped with silvered almond and maple syrup creates magic in this kiwi chia seed pudding recipe. Must say I love this more as compared to my strawberry chia seed pudding.

Preparing chia seed pudding is very easy to make. Soaking chia seeds overnight or for few hours in milk or almond milk or coconut milk, add sweetener and top up with fresh fruits and garnish with dry fruits. A simple formula to make it as

Chia seeds+coconut milk+sweetner+fruit+nuts= Chia seed pudding

Kiwi Chia Seed Pudding | Vegan | Gluten Free

Ingredient                                                               Serves 2

1 Cup coconut milk
3 Tblsp chia seeds
1 Cup chopped kiwi (if using puree then 1.5 cup pureed kiwi)
2 Tblsp honey or maple syrup
1/2 tsp vanilla extract (optional)
2 Tblsp chopped almond
1 Tblsp silvered almond for garnishing

Method

  1. Firstly soak chia seeds in coconut milk overnight or at least 4 hours. Keep shaking them in between. Chia seed tends to make lump if undisturbed.
  2. Soaked chia seeds form a gel-like consistency. If this is too thick then add 1/2 cup more coconut milk till you get your desired consistency.
  3. In addition to this add honey or maple syrup and vanilla extract (optional). Mix well.
  4. Take two bowls or glasses and divide this mixture into two.
  5. Add chopped kiwi fruits (puree if using pureed kiwi) and chopped almonds.
  6. Decorate with silvered almond and cut kiwi pieces.
  7. Serve this kiwi chia seed pudding either chilled or cold.

Note

  1. During the soaking time, it is good to shake in between else chia seeds forms lumps which are a bit time taking to remove.
  2. With these measurements add any of your favorite fruits and nuts.
  3. Either honey or maple syrup can be used for sweetness.
  4. This chia seed pudding with any variation can be consumed twice or thrice a week. I noticed if I eat more than I get constipated. Drink more water after consuming this.
  5. Use the extra quantity of coconut milk to make it thin if the soaked mixture is very very thick.
