    Kiwi chia pudding- prepared with coconut milk, chia seed, kiwi fruit, and natural sweetener maple syrup. It is vegan, & gluten-free chia pudding. A perfect healthy breakfast recipe, midday snack option, or a light dessert. Here is how to make it.

    Make it with a variety of fruit combinations such as strawberry chia pudding & Coconut chia pudding with pomegranate. Play with your favorite choices of dry fruits.

    Preparing chia seed pudding is very easy to make. A simple formula to make it as "Chia seeds+coconut milk+sweetner+fruit+nuts= Chia seed pudding".

    Soaking chia seeds overnight or for a minimum of 1 hour in coconut milk, add sweetener and top up with fresh fruits and garnish with dry fruits. That's all is required to make this healthy and a perfect breakfast recipe.

    • Dairy-free milk- I used coconut milk to soak chia seeds. Other dairy-free milk options can be almond milk, oats milk, and cashew milk.
    • Chia seeds- Use good quality of chia seeds.
    • Fruit- Golden kiwi is used here for topping, you can use mixed berries, chocolate chip, mango, pumpkin, apple and there are endless possibilities.
    • Sweetener- Maple syrup is used here for sweetness. Feel free to use stevia or honey.
    • Nuts- Almond silvers are used here, but you can choose any nuts of your choice.
    • Extra flavoring- Vanilla extract is used for little extra flavor. It pairs well with coconut milk.

    How to make kiwi chia seed pudding

    It is very easy recipe to make, usually with basic three ingredients, chia seed, coconut milk & sweetener. Rest are to enhance the overall taste profile.

    So let see how to make this kiwi chia pudding step by step.

    Soak chia seed

    • First of all, soak chia seeds in coconut milk overnight or at least 1 hour.
    • Stir in 2-3 times to avoid lumps. Chia seed tends to make lump if undisturbed.
    • Soaked chia seeds form a gel-like consistency. If this is too thick then add ½ cup more coconut milk till you get your desired consistency.

    Add sweetener & Flavor

    • Once you prepared the perfect consistency mixture of coconut milk & chia seeds, add honey or maple syrup and vanilla extract. Mix well.

    Prepare For Toppings

    • Take two bowls or glasses and divide this mixture into two.
    • Add chopped kiwi fruits (puree if using pureed kiwi) and silvered almonds.
    • Garnish with slivered almond and cut kiwi pieces.
    • Serve this kiwi chia seed pudding chilled.

    I added cut kiwi fruit, but you can make layers with chia seeds, & different fruits while serving. Layers make a great parfait recipe.

    The addition of granola makes a healthy combination with this kiwi chia pudding. Again you can serve it as a parfait.

    Storing suggestions

    It is a make-ahead recipe and can be stored in the fridge for 4-5 days easily. Prepare and store in containers in portions. Serve immediately in breakfast, snacks, or dessert time.

    Tips & FAQ's

    • While soaking, stir a few times in order to prevent lump formation. This is very important, as the mixture thickens, it is difficult to remove lumps.
    • A minimum of an hour is a must soak chia seeds.
    • You can use honey, stevia as well for the sweetness.
