The best time of making this sweet is in winters, as dates and dry fruits keep the body warm. Rest of the time we should consume it in moderation as it can create heat in the body. This burfi is very simple to make. Mixing all ingredients together forming a cylindrical shape or a log, set them for an hour and finally cut them in 1/2″ thick pieces.

Khajur Burfi | Dates n Nuts Rolls

Ingredient                                                                               20 Pieces

2 Cup dates (use Medjool brand, they are soft and easy to cut)
1/2 Cup almond
1/2 Cup cashew
1/4 Cup dry coconut powder
1/2 Cup pistachio
2 Tblsp ghee
1 Tsp cardamom powder
2 Tbsp khuskhus (poppy seeds)

Method

  1. First of all chop almond, cashew and pistachio and keep it aside.
  2. Dry roast poppy seeds and keep it ready.
  3. Roughly chop the dates and discard their seeds. I am using Medjool dates, they are soft and having caramel sort of taste which makes this burfi tastier. You can coarsely grind them as well, but that makes a dough which is difficult to handle later while mixing in other dry fruits.
  4. Now heat a nonstick pan on medium low flame and add ghee. Once it melts, add chopped dry fruits and stir continuously for 2-3 minutes. This will give a crunch to dry fruits.
  5. To this add coconut powder, cardamom powder and chopped dates. Mix well and saute for another 2-3 minutes.
  6. After 2-3 minutes switch off the flame and let the mixture cool down.
  7. When the mixture is cool enough to touch make a cylindrical shape by pressing with both hands.
  8. Coat this log with poppy seed so that it covers the whole cylinder shape of the mixture.
  9. Now place this rolled burfi on aluminum foil sheet and wrap up tightly. Keep it in the fridge for an hour to set.
  10. After an hour when the rolled burfi is set, take them out of the fridge. Cut them into 1/2″ thick pieces.
  11. Khajur burfi or dates burfi or dates n nuts rolls are ready to serve on festive occasions.

Note

  1. You can add other dry fruits like apricot, walnut, chiroli as well. But this is the basic recipe which remains the same.
  2. This sweet has a good shelf life. You can keep it without a fridge as well for 1 week.
