    It's been a year since I have been making yogurt in an instant pot. I had been buying yogurt when I moved to the USA, never got yogurt set properly until I invested in instant pot.

    In winters making yogurt was never been easy and always end up with some or other reasons to not get it right.

    Instant Pot makes the yogurt-making process so easy and smooth. This is a fail-proof method of setting a perfect yogurt or curd (In India we call it curd) every single time.

    You can make a big batch of yogurt in the inner pot. Or use separate glass containers to set yogurt in IP. This no-boil, cold start yogurt making is all you need.

    Cold Start Yogurt

    To make cold start yogurt you simply need an instant pot with the YOGURT button. Instant Pot Mini DUO (DUO Plus, DUO, Smart, Ultra) has a YOGURT button.

    No boil, cold start process simply calls for adding milk & starter in an instant pot and set the timer for 8 hours. There is no need to boil the milk and so call it as No-Boil method.

    There is no need to boil milk, wait for a specific temperature before adding live culture, and then set for 8 hours. This is what is done in the traditional way of making homemade yogurt. It always gives uncertain results until you have a thermometer to check the temperature.

    Ingredients

    • Milk- using organic whole milk results in thick, creamy & smooth yogurt.
    • Starter- You need a part of yogurt as a starter that contains active live culture. "The preparation of curd requires a lactobacillus bacteria, while yogurt is made using two specific strains of bacteria called Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus bacteria."     To make thick and creamy yogurt you must use full-fat whole milk. You can always use 2% and low-fat ultra-pasteurized milk but the result will not be the same.

    This recipe has been tested with ultra-pasteurized whole milk bought from Costco & SAM's. The recipe will be updated ASAP it is tried with any other variety of milk.

    Instant Pot Clean Up

    Make sure inner pot is clean thoroughly. Check the lid & rubber, there should not be any stinky smell coming out of them.

    Cleaning is a must before making yogurt, else fermentation won't take place nicely and curd won't sit nicely.

    How to make instant pot yogurt

    Making homemade yogurt is way cheaper and saves you a lot of money. Let see how to make homemade Instant Pot Yogurt step by step.

    Step-1 Whisk starter

    Mix starter in a cup of milk and whisk nicely. It is very important as we need that starter is combined in the milk completely.

    Step-2 Mix starter

    Pour the rest of the milk in instant pot's inner pot. Add the whisked starter to it. Mix properly with the help of whisker or spoon.

    Step-3 Set to YOGURT mode

    Close the instant pot lid and set at the venting position. Now press the YOGURT mode and set the time for 8 hours. 8 hours are great for having mild yogurt. Incubating for more than 8 hours will give TART yogurt.

    After 8 hours you may see the water running on the above layer. That is normal.

    Step-4 Chill

    Once the 8-hour timer is over, open the lid and take out the inner pot. Keep it in the fridge for two hours.

    Step-5 Serve homemade yogurt

    After two hours yogurt is set properly. You can serve it and use it for breakfast granola, raita, or buttermilk.

    Yogurt has many ways to use. You can make smoothies, summer drinks dips, & serve with the meal. It helps in completing the protein requirements.

    What kind of milk to be used in making yogurt?

    For the cold start yogurt you need ultra-pasteurized milk. Organic ultra-pasteurized milk from Costco & SAM's have been tried to make this yogurt.

    Raw or pasteurized milk will not work in no boil method. You must boil any other milk then ultra-pasteurized milk.

    How do you make yogurt thicker?

    There are a few ways where you can get thicker yogurt.

    1. Use whole milk to set the yogurt.
    2. The addition of 3-4 tablespoon of milk powder also results in a thicker yogurt.
    3. Once the yogurt is set, strain through a muslin cloth.

    How long does yogurt stay in instant pot?

    To set the perfect creamy yogurt, 8 hours of incubation required. Fermenting for more than 8 hours will not result in a thicker yogurt.

    How long does a homemade yogurt last?

    You can store homemade yogurt in the fridge for up to 15-20 days. Keeping it for longer makes the yogurt sour due to active bacteria.
