How to choose right avocados for guacamole
Choosing the best, ripe avocados is the key to make a perfect guac. Look for avocados that are dark in color, slightly soft while applying pressure. These are the ones that are ripe enough to make the best guacamole.
If avocados are firm than better to wrap it in paper to ripe them faster. You can also add a banana to make the process even faster.
I have tried making guacamole with over ripped, hard and medium ripe avocados. Medium ripe avocados give a great taste. Too ripe then no taste and very mushy. If firm, then completely tasteless.
Look for avocados that are ripe but firm. They should not be mushy and feels very soft. Among a variety of avocados, I find Hass avocado from Costco best to make guacamole.
What onions are best to use in guacamole
White onion does not contain harsh flavor and a bit sweet in nature. The red and yellow onion will have strong flavors which I find ruining the guacamole taste. But just rinse them after chopping and they good in the dip. I am using red onion to make this guacamole dip as per the availability.
Adding onion gives extra crunch, but you can make guacamole without onions. It will still taste great and fresh.
Should you add tomatoes in guacamole
It totally depends and a personal choice. However, it is said that onion and tomatoes are not supposed to be in guacamole. Better to have a salad rather than a creamy avocado dip.
But personally I prefer adding tomatoes in my guacamole recipe, my kids enjoy it and I love that juicy crunchy with creamy texture. You can add any variety of tomato.
Always deseed tomatoes before adding, else it can make guacamole watery.
How to adjust spice level
This guacamole recipe is without jalapeno and yet a bit spicy. Adding red chilis, green chilies, serrano, and red chili flakes are few option to make spicy guacamole without jalapeno.
I prefer to use serrano chilies, deseed them and chop them finely. This makes a perfect family dip to enjoy with kids. However, you can completely skip chilies and can use red chili flakes.
Feel free to skip chilies if you are sensitive to hot flavors.
Cilantro or green coriander
Adding this fresh green herb enhances the flavors. However, if required you can always skip adding it. You can use parsley to make guacamole without cilantro.
Other ingredients
Lime juice, finely chopped garlic, and salt are other few ingredients to be added to enhance the taste.
How to make guacamole at home step by step
First of all, make sure all ingredients are ready as required in the recipe. Avocado turns brown as soon as it is peeled and come in contact with air. So use it once other ingredients are ready to use. Let see how to make guacamole step by step.
Cut the avocados into halves and remove the seed. Scoop out and place in a mixing bowl.
Using a fork mash it nicely. Do not over mash, you may want to have some chunks. The best guacamole has a combination of some chunks with mashed avocado.
Mix the rest of the ingredients and combine them properly. Do not mash to puree consistency. Bits n pieces of avocado give a nice chunky texture.
Adjust salt and lime juice as per taste. Mix and serve at room temperature or chilled.

Storing suggestions
Avocados oxidize when cut and have a tendency to turn in brown color. Storing guacamole is tricky but using a few tricks you can store it in the fridge for 2-3 days.
Store the leftover guac in an airtight container and add lemon juice on the surface. This will prevent it from browning. In case if it happens than Just discard the discolored part and serve the rest of the guac.
You can store the uncut avocado in the fridge for 3-4 days easily.
If cut then applies lemon juice on the surface. Lemon juice helps to slow down the process but eventually, avocado turns to brown and then black if storing it for more than a week.
Freezing is not recommended as after the thaw process guac does not taste as fresh. However, you can chop the avocado, transfer it in freezer-friendly bags, and store it in the freezer for a month. Just thaw before using.
Wrapping in a plastic wrap in a way that it touches the open surface of the avocado or guacamole, makes a difference. It remain fresh for 2-3 days and later starts discoloring.
Variations
Instead of creamy consistency you can cut the avocado in tiny bits and make a chunky guacamole. Also add finely chopped onion and tomato to make it like a salsa.
Basically to make a chunky guac, while combining all ingredients you are not mashing them, rather mixing uniformly and serving as is.
Add some chopped strawberries, pineapple and mango to this salsa. This will make a new variation with some seasonal fruits.
Feta cheese or grilled corn can also be added to this guacamole recipe.
