Avocados are high in fat but considered as good fats. It is also rich in Vit B, E and K. It contains 60% more potassium than bananas. You can read more about avocados here.

How To Choose Right Avocados For Guacamole??

Well, so far I have tried all kind of avocados in making guacamole. Overripped, hard and medium ripe avocados. Must say that medium ripe avocados give a great taste. If they are too ripe then no taste as such and very mushy. If not ripe enough and hard, then completely tasteless.

Look for avocados that are ripe but firm. They should not be mushy and very soft.

How To Store Guacamole??

Avocados oxidize and have a tendency to turn in brown color. Though lime juice helps to slow down the process eventually guacamole turns to brown and then black. Storing life is very short just a few hours. So prepare just before consumption. I have not stored it in the fridge but read that using plastic wrap guacamole can be stored for up to one day. Just press the plastic wrap directly on the surface and store.

What Onion To Use In Guacamole??

White onion does not contain harsh flavor and a bit sweet in nature. This taste great in guacamole. The red and yellow onion will have strong flavors which I find ruining the guacamole taste. But just rinse them after chopping and they good in the dip.

Homemade Guacamole Recipe

Ingredient                                            Yield 1 cup guacamole

2 Ripe medium-size avocado
2 Tblsp finely chopped white onion (red and yellow onion can also be used)
1 Tblsp lime juice
2 Tblsp finely chopped tomato
1 Medium sized garlic clove minced
1 Serrano chili chopped finely
Salt as per taste
Handful green coriander or cilantro chopped finely

Method

  1. First of all, make sure all ingredients are ready as required in the recipe. Avocado turns brown as soon as it is peeled. So use it once other ingredients are ready to use.
  2. Now cut the avocados into halves and remove the seed. Scoop out and place in a mixing bowl.
  3. Using a fork mash it nicely. Mix rest of the ingredients and combine properly. Do not mash to puree consistency. Bits n pieces of avocado give a nice chunky texture.
  4. Adjust salt and lime juice as per taste. Mix and serve at room temperature or chilled.
  5. Homemade guacamole is ready to serve.

Note

  1. Recently I read and noticed that if you rinse chopped onion with fresh water and then add, it taste great. Rinsing removes the harsh flavor out of it.
  2. Avocados for guacamole should be neither overripe nor very hard. So choose them carefully for the dip.
