Lauki ki muthia is a great kid-friendly snack too. Just pack in their lunchbox with ketchup and they all set. In this lauki muthia, I added the same quantity of cabbage as well. With lauki and cabbage one thing to remember, they contain a lot of water which is sufficient to combine the flour and the rest of the ingredients. No need for adding extra water.

There are many version available for making muthia. With few vegetables combination and rest of the ingredients are same. Steam them, temper and serve. Usually, steamed muthia are given tempering of curry leaves, mustard seeds, and sesame seeds. Sesame seed gives a crunchy and nutty flavor to it.  If you shallow fry them then golden crunchy crust gives another level of crunch and taste.

Lauki Nu Muthia or Lauki Muthia

Ingredient                                                                       4-6 Servings

1 Cup lauki/bottle gourd grated
1 Cup cabbage grated
1/2 Cup jwar flour
1 Cup whole wheat flour
1/2 Cup sooji
1/2 Cup besan/gram flour
6 Garlic pods grated
2 Green Chili
1 Tsp carrom seeds
1 Tsp coriander powder
1/2 Tsp asafoetida
1 Tsp turmeric powder
1 Tsp sesame seeds
1/2 Cup curd/yogurt
1 Tsp amchur/dry mango powder OR 1 lemon juice
Salt as per taste
2 Tsp oil
1 Tsp grated ginger

Tempering

1 Tsp oil
sprig of curry leaves
1 Tsp mustard seeds
1 Tsp sesame seeds

Method

  1. First of all in a mixing bowl combine all the ingredients together and make a dough. If you find it little dry use water to make a soft dough, else no need.
  2. After making dough rub oil on your palms and divide dough in equal proportions, shape them into a cylindrical shape.
  3. Grease the steamer plates and steam these cylinders for 15-20 min. Steam until a toothpick comes out clean.
  4. After 20 min removes them from the steamer and cools them completely. Cut these into small pieces.
  5. Heat a heavy bottom pan and prepare for tempering, to this add all cut pieces of steamed lauki muthia into the pan and mix well.
  6. Note

  1. Adding water is the main precaution here. Since cabbage and bottle gourd both contain water content, so if required add water gradually.
  2. You can add cauliflower and carrot as well to get a new version of muthiya.
