This year atta ladoo with dry fruits I prepared the way my father used to make for us during Holi. Sometimes we made in Diwali as well.

Almond, cashew, pistachio, edible gum (called as gond), and lotus seeds with wholewheat flour and jaggery are the ingredients used in making this aate ke ladoo with ghee.

Different names of whole wheat dry fruit laddu

Dry fruits laddu with gond also known as aata ladoo, gond ke ladoo, gond ke laddu, atte ke ladoo, aate ke ladoo with dry fruits, gond makhana ladoo or simply call them gond laddu, atta dry fruit laddu, gehu ke laddu, gond dry fruit laddu, aate ki pinni.

In Maharashtra, we call them dink ladoo or dinkache laddu or dink ladu, in Punjabi similar recipe called Pinni.

Jaggery and edible gum both have warm property, that is the reason this gondh laddu are consumed in winters especially.

What is Gond (Edible Gum)

Gond is the Hindi term used for “Edible Gum”. Natural gum are sourced from tree sap. Not all gums are edible. In Indian cuisine there are two types of gums which are edible with different properties.

Tragacanth Gum is known as “Katira Gum” in Hindi. Due to its cooling properties, it is often used in summer in raita, beverages, to beat the heat.

It is also used as emulsifier and thickening agent in ice-creams and curries.

Acacia gum is derived from acacia tree and has warm properties. Gond laddu are prepared by using acacia gum and mostly in winters as they keep body warm.

Gond ke ladoo & gond paak are two popular gond recipes to make winter. These ladoos are great for elders & kids, as they need extra care in winter.

You can use edible gum in making healthy laddu, gond barfi, & in beverages in summers.

In Marathi Gond is known as “Dink” & in “Antu” in Kannada.

  • Flour– Using whole wheat flour increases the nutritional value of this laddu.
  • Gond– Edible gum is the star ingredient of this gond laddu recipe. Without gond they simply known as aata laddu.
  • Dry fruits– Lotus seeds, almond, cashew, pistachio, raisins & melon seeds are used. However, you can always make your own combination of nuts.
  • Sweetener- jaggery or sugar powder both can be used. I have tried with both sweeteners and with the photos you can see.
  • Ghee– Using ghee makes this Indian festive sweet so rich & nutritious. This can not be replaced. But you can always make dry fruits ladoo with dates with no ghee. Learn how to make ghee at home.
  • Flavor– Cardamom powder is used for aroma.

How to make Gond Ke Ladoo

To make these wholewheat dry fruit laddu first roast wholewheat flour patiently with some quantity of ghee. It usually takes 20-25 min till it becomes golden brown in color and the raw smell of flour goes away.

Roast all the dry fruits too in ghee. Grind the edible gum and fry in ghee, it will puff in the ghee easily and mix nicely in the wheat flour later on.

Mix everything in a mixing bowl and add jaggery powder. Adjust ghee quantity till the point you can bind ladoos.

Let see how to make these easy and delicious gond laddu with wholewheat flour step by step.

Step-1 Roasting wheat flour

First of all, take a heavy-bottomed pan and add wholewheat flour and ghee. You need ghee as much as that covers each particle of the flour.

Roast on the medium to low flame till the flour color changes to golden brown color. This process takes about 20-25 min. Be careful as it tends to get burnt quickly.

When flour is done, keep that aside in a wide plate.

IMPORTANT. 20-25 minutes are taken in roasting flour. This makes gond ladoo a crunchy crisp texture. You may notice sort of gooey texture which sticks in teeth if the flour is not roasted well.

Step-2 Roasting chopped nuts & seeds

In the same kadhai add 1 tbsp of ghee and roast chopped almond, cashew, pistachio, raisins, and melon seeds.

Once they change color transfer to the same plate you added roasted wheat flour.

NOTE- You can either chop dry fruits before hands and roast OR just roast them and then grind coarsely.

Step-3 Roasting lotus seeds, Grind & Add

Add lotus seeds in the same kadhai with a little quantity of ghee and roast for 3-4 min. Let it cool down.

Once they are cool, coarsely grind them and add in the mixture.

Step-4 Frying edible gum powder (gond) in ghee

Grind the edible gum to a fine powder. It will be easy to fry while adding to ghee at a later stage.

Finally, take all the remaining ghee in a kadhai and add edible gum powder. It will puff up and changes color to little golden color. now turn off the flame.

Add this to the mixture and combine everything together.

Step-4 Add cardamom powder & jaggery

To this add jaggery powder and cardamom powder. NOTE- You need a big bowl or Kadai to mix everything perfectly.

Step- 5 Mix well

Mix well with your hands now. NOTE- I had to transfer it to a big kadai.

Add all the remaining ghee and keep mixing until everything combine uniformly.

Step- 6 Add extra ghee if mixture is too dry

In case you find this mixture a bit dry then add 2 tbsp extra ghee and mix. You should be able to form ladoos.

Step- 7 Start making gondh laddu

Take a fistful mixture and shape it into a round ball. Do the same process with the rest of the mixture.

Serving suggestions

You can consume these energy aate ke laddu with gond in the morning during breakfast. With milk it makes a perfect combination.

Prepare them on festivals like Ganesh chaturthi, Krishna Janamashtmi, Diwali & Holi.

They make a great gift hamper to exchange with family & friends in Diwali.

Storing suggestions

Store them in air tight container. Always use dry & clean hands while picking ladoo from the container.

  • Room Temperature gond ke laddu with jaggery are good up to one month at room temp.
  • Refrigerator You can store in a glass container and keep in the fridge for up to 3 months. You can microwave for 30 seconds before consuming.
  • Freezer Store in freezer friendly bags and store for up to 6 months. Thaw before reheating. 30 seconds are good enough while reheating in microwave.

Tips & FAQ’s

Making gond ke laddu is a very straight forward recipe, however there are few points to take care if you wish to make the BEST ladoo.

  • Any variety of nuts and dry fruits can be added to this recipe as per choice.
  • Roasting wheat flour on low-medium heat.
  • If the mixture is too dry increase ghee for 2-3 tbsp. Decreasing ghee quantity is not recommended as it will lose the purpose of making such delicious and nutritious sweet.
  • Replace jaggery with the same amount of sugar if you want to make dry fruits ladoo with sugar.
  • Make sure adding gond when ghee is hot. It should be puffed up nicely else it will be very chewy.

Yes, you can make this delicious aata ladoo with dry fruits without sugar using jaggery powder. Just use jaggery powder in place of sugar. I used this jaggery powder.

In this recipe, I used jaggery powder to make ladoos.

How to make atta ladoo with dry fruits?

Follow the same recipe and skip adding edible gum (gond). You will get aata ladoo with only dry fruits & nuts.

Without adding gond, this recipe is called as wheat laddu or wheat flour ladoo, or wheat laddu.

How to make pinni?

Pinni is a Punjabi term used to make aata laddu with gond. Follow the same recipe to make pinnis.

Ingredients

  • 2 cup whole wheat flour
  • 2.5 cup lotus seeds phool makhana
  • 1/4 cup almond chopped
  • 1/4 cup cashew
  • 2 tbsp melon seeds (optional)

  • 1/4 cup raisins optional
  • 1 cup ghee 2-3 tblsp extra
  • 2 cup jaggery powder

Instructions

Step-1 Roasting wheat flour

While preparing I was remembering my father and missing him too much. Before marriage, he used to call us in the kitchen, assign the work who will do what, what is the menu, what are the sweets and savory items to prepare. Munno tu ye kar, Neetu tu ye kar (Munno do this, Neetu you have to do this) his voice was echoing in my ears. It is been so many years that I have not heard this word from him. He is alive (may GOD bless him with good health) but we are not in talking terms. Don’t know why I still miss him a lot :(.
