In north India as soon as red carrots hit the market we buy them in bulk making carrot halwa, carrot kheer, gajar ka paratha. Even with simple butter, these gajar parathas taste heavenly. Serve them hot with curd or pickle and if you can indulge a bit then add a dollop of butter. Kids love these parathas due to a little sweetness coming from carrot. I especially add chopped green chili (not spicy one) and chili flakes which taste superb in these parathas.

Gajar Ka Paratha | Carrot Paratha

Ingredient                                                                      14 Parathas

3 Cup whole wheat flour
2 Cup tightly grated carrot
2 Tsp grated ginger
1 Tsp cumin seed powder
2 Tsp salt (this was enough)
2 Green chili fine chopped (used nonspicy green chili)
1 Tsp red chili flakes (optional)
A handful of chopped green coriander
1/4 Cup water to knead
Oil or ghee (clarified butter) for cooking

Method

  1. First of all, clean, wash and grate the carrot. Measure and then add in flour.
  2. Take a big enough mixing bowl to accommodate all the listed ingredients. Mix thoroughly and start binding together.
  3. Use water a little quantity at a time. Carrot will start leaving the water as we have added salt.
  4. It took around 1/4 cup + 2-3 tsp of water to make a soft dough. Do not keep the dough for resting as carrot starts leaving the water.Gajar ka paratha or carrot paratha is a simple Indian flatbread which is healthy and delicious.   5. Heat a griddle on medium flame.
  6. Divide the dough into equal parts. 14-16 parathas you can make with this quantity.
  7. Roll out a portion in 6″ circle and place it on the heated griddle.Gajar ka paratha or carrot paratha is a simple Indian flatbread which is healthy and delicious.   8. Cook on both side by applying oil or ghee. Cook until golden brown.
  9. Serve hot this carrot paratha or gajar ka paratha with any of your favorite company like curd, pickle, tea or potato sabji and enjoy.

Note

  1. Once you make carrot paratha dough, start rolling out parathas. Otherwise, carrot starts leaving water and dough becomes watery, difficult to handle.
  2. You can add onion too in the mixture.

    Carrots have imparted a beautiful color to paratha. I do make this paratha, but in stuffed paratha form. Kneading carrots in the dough certainly makes it easier to handle.

  2. I love adding grated carrots in my paratha dough just to feed easily my kids with this incredible vegetable. Gajar ka paratha looks fabulous and catchy with a beautiful colour. One of the best way to sneak carrots.
