Gajar ka paratha or carrot paratha is a simple Indian flatbread which is healthy and delicious. Grated carrot mixed in whole wheat flour, flavored with cumin seed powder, chopped green chili, chopped green coriander, make a soft dough and roll out hot parathas. Makes a perfect breakfast or kids lunch box recipe.
In north India as soon as red carrots hit the market we buy them in bulk making carrot halwa, carrot kheer, gajar ka paratha. Even with simple butter, these gajar parathas taste heavenly. Serve them hot with curd or pickle and if you can indulge a bit then add a dollop of butter. Kids love these parathas due to a little sweetness coming from carrot. I especially add chopped green chili (not spicy one) and chili flakes which taste superb in these parathas.

So let see how to make this nutritious gajar ka paratha. You can easily scale up or down this recipe as per requirement. I made these for 5 people so made 14-16 parathas.
Gajar Ka Paratha | Carrot Paratha
Ingredient 14 Parathas
3 Cup whole wheat flour
2 Cup tightly grated carrot
2 teaspoon grated ginger
1 teaspoon cumin seed powder
2 teaspoon salt (this was enough)
2 Green chili fine chopped (used nonspicy green chili)
1 teaspoon red chili flakes (optional)
A handful of chopped green coriander
¼ Cup water to knead
Oil or ghee (clarified butter) for cooking
Method
- First of all, clean, wash and grate the carrot. Measure and then add in flour.
- Take a big enough mixing bowl to accommodate all the listed ingredients. Mix thoroughly and start binding together.
- Use water a little quantity at a time. Carrot will start leaving the water as we have added salt.
- It took around ¼ cup + 2-3 teaspoon of water to make a soft dough. Do not keep the dough for resting as carrot starts leaving the water.
- Heat a griddle on medium flame.
- Divide the dough into equal parts. 14-16 parathas you can make with this quantity.
- Roll out a portion in 6″ circle and place it on the heated griddle.
- Cook on both side by applying oil or ghee. Cook until golden brown.
- Serve hot this carrot paratha or gajar ka paratha with any of your favorite company like curd, pickle, tea or potato sabji and enjoy.
Note
- Once you make carrot paratha dough, start rolling out parathas. Otherwise, carrot starts leaving water and dough becomes watery, difficult to handle.
- You can add onion too in the mixture.
