Replacing refined sugar with coconut sugar made these muffin’s color a bit darker. I wanted to decorate them with cream cheese frosting but I still have to buy a hand blender. Will do for another experiment with muffins. Baking muffins are more enjoyable for me than to bake a cake nowadays. First, it gets over fast and second, my kids love eating their mini cake(that is what my son says).These eggless whole wheat orange muffins are citrus flavored, soft and spongy. Eggless Whole Wheat Orange Muffins

Ingredient                                                                            12 Muffins

1.5 Cup whole wheat flour
1 Tsp baking powder
1/2 tsp baking soda
1 Pinch salt
3/4 Cup coconut sugar
1/4 Cup olive oil (you can replace it with butter)
1/2 cup+ 1/4 Cup Freshly squeezed orange juice
1 Tblsp orange zest
1/2 Cup yogurt

Method

  1. Preheat oven at 350 F or 180C.
  2. Line a muffin tray with muffin liners. This recipe will make 12 muffins.
  3. Sift all dry ingredients whole wheat flour, baking soda, baking powder and salt 2-3 times so that all will combine very well.
  4. In another mixing bowl take oil/butter, sugar and orange juice. Whisk well till it becomes smooth.
  5. Now add orange zest and yogurt. Mix till everything incorporated properly.
  6. Add dry ingredients to wet ingredients and combine till there is no dry powder you can see. Do not over mix.
  7. Pour this batter in the muffin’s liners. Sprinkle some choco chips on the top and bake them for 15-20 min. Check after 15 minutes with the toothpick. If it comes out clean then remove them from the oven and let them cool down on the cooling rack.
  8. Eggless whole wheat orange muffins are ready to serve in breakfast or snack time.

Note

  1. You can add refined sugar as well. Replace with 1/2 Cup refined sugar.
  2. Replacing whole wheat flour with refined flour give you more spongy and fluffy, muffins.
