They are very simple, healthy and easy to make. Today I am sharing chia seed pudding which is topped with pomegranate and choco chips.     What are chia seeds and their benefits

    Chia seeds are the tiny black seeds from the Salvia hispanica plant. These seeds are very rich in omega-3 fatty acids. Since chia seeds don't deteriorate, they can be stored for a longer period without becoming rancid. You need not grind them in order to consume.

    Soaking chia seed overnight in milk or water or coconut milk and then mixed with your choice of nuts like almond, cashew, walnut or hazelnut and top it with favorite fruits like apple, banana, orange or pomegranate.     This is the first time I used coconut milk but must admit that chia seed and coconut milk combination is heavenly. The sweetness of coconut gives a different flavor to it and fresh smell makes it so aromatic.     Chocolate Pomegranate Chia Seed Pudding

    Ingredient                                                                       Serves 2

    1 Cup coconut milk (I had very thick coconut milk)
    ½ - 1 Cup coconut water water
    3 Tblsp chia seeds
    2 Tblsp honey
    ½ teaspoon vanilla extract
    2-3 Tblsp pomegranate seeds
    2 Tblsp choco chips or chopped chocolate
    1 Tblsp fresh shredded coconut

    Method

    1. Firstly soak chia seeds in coconut water overnight or at least 4 hours. Keep shaking them in between.
    2. Soaked chia seeds form a gel-like consistency. If this is too thick then add coconut water until you get your desired consistency.
    3. In addition to this add honey and vanilla extract. Mix well.
    4. Take two bowls or glasses and divide this mixture into two.
    5. Decorate with choco chips or chopped chocolate and pomegranate seed.
    6. Add few fresh coconut pieces and serve this chocolate pomegranate chia seed pudding with coconut milk chilled or cold.

    Note

    1. During the soaking time, it is good to shake in between else chia seeds forms lumps which are a bit time taking to remove.
    2. With these measurements add any of your favorite fruits and nuts.
    3. Either honey or maple syrup can be used for sweetness.
    4. This chia seed pudding with any variation can be consumed twice or thrice a week. I noticed if I eat more than I get constipated. Drink more water after consuming this.
    5. I used coconut water to make it thin as the soaked mixture was very very thick.

      Chia is my favorite, love them for breakfast! Pomo and chocolate chia pudding looks stunning! Gorgeous ruby reds with that pearly white chia makes this a gorgeous dish!

      What a beautiful looking pudding this is. I am yet to work with chia seeds and need to give it a try. love the pomegranate seeds in the pudding. It gives a nice crunch to it.
