    Cashew Cookies

    I saw these cookies in Sunita's blog. Well outcome was good but I feel somehow I should not be added egg. So I will try without using egg and then will update how will that make difference.

    Ingredients: 18-20 Cookies

    1 Cup cashews coarsely ground
    3 Tblsp semolina
    ½ Cup all purpose flour
    ¼ teaspoon baking soda
    1 Egg
    2.5 Tblsp unsalted butter
    3 Tblsp light brown sugar
    8-9 Cashew nuts halved for garnishing

    Method: Pre heat the oven at 160C. Sift the flour and soda into the bowl and mix well. To this add semolina and ground cashews and mix well. Beat egg in a bowl. To this add brown sugar and unsalted butter. Mix well and add all dry ingredients.
    Dont over knead/mix.
    Pour half a spoon mixture on greased baking tray and flatten that with the help of fingers to make a small circle. Press a halved cashew on top of each cookie and bake in the centre of the oven for 10-12 minutes or till golden around the edges. Check them after 8-10 min as they tend to burn very fast.
