This salad is from MasterChef for the theme and adapted to my suit my taste.  I tweaked the original recipe as per the availability of the ingredients in my kitchen pantry.

How To Make Carrot Quinoa Salad?

Preparation to make this delicious quinoa salad start with cooking quinoa. Let it cool down and make the caramelized carrot with orange juice & maple syrup. Mix everything and serve with garnishing. Fresh aroma of oranges and yogurt make it a lip-smacking salad.

How To Boil Quinoa Perfectly?

To make perfect quinoa I found water and quinoa ratio as 2:1. First clean and wash 1/2 cup quinoa, boil it with 1 cup of water on the medium-high flame. When water content remains very less just switch off the flame and cover with the lid for 5 minutes. That’s all you need to do to get the perfectly cooked quinoa.

How To Make Yogurt Tahini Dressing?

To make yogurt tahini dressing, mix herbs, maple syrup and tahini paste with the yogurt. I used greek yogurt because it is thick and perfect for the dressing. You can use hung curd in case of unavailability of greek yogurt. Garnish with roasted walnut and coconut slices and serve at room temperature.

You can skip this step and simply use lemon juice, salt, and pepper.  This quinoa salad will taste great even without tahini dressing so it is completely optional.

Carrot Quinoa Salad With Yogurt Tahini Dressing

To Make Quinoa
1/2 Cup quinoa
1 Cup vegetable stock (normal water or chicken stock)

To Make Caramelized Carrot
1 Tsp coriander seeds (coarsely ground coriander powder)
2 Tblsp butter
3 Medium carrots julienne cut
1 Medium size orange juice and its zest
2 Tbsp maple syrup (honey)
1/4 Cup vegetable stock (normal water or chicken stock)

To Make Yogurt Tahini Dressing
1/2 Cup Greek yogurt
2 Tblsp tahini
1/2 Lemon, juiced
1 garlic clove minced
4 Tblsp coriander leaves chopped finely
1 Tblsp maple syrup (honey)
Salt to taste
Black pepper powder to taste

For Garnishing
1/2 Cup roasted walnut roughly chopped
Coriander leaves
3 Tbls feta cheese (optional)
Orange slices

Method

  1. First of all, wash quinoa with clean with water 2-3 times. Add it in a pan with vegetable stock and boil on medium flame for 5-7 minutes. Switch off the flame and cover with lid for 5 minutes.
