This quinoa salad is from MasterChef and adapted to my suit my taste. I tweaked the original recipe as per the availability of the ingredients in my kitchen pantry.

To Make Quinoa
- Quinoa- Use good quality of quinoa, I am using white quinoa here.Red quinoa also works fine.
- Vegetable stock- Using vegetable stock in boiling quinoa works great. It adds flavors in quinoa. You can always use plain water stock is not available.
To Make Caramelized Carrot
- Coriander seeds (coarsely ground coriander powder)
- Butter
- Carrots julienne cut
- Orange juice and its zest
- Maple syrup (honey)
- Vegetable stock or plain water
To Make Greek Yogurt Tahini Dressing
- Greek yogurt
- Tahini
- Lemon, juiced
- Clove minced
- Coriander leaves chopped finely
- Maple syrup (honey)
- Salt to taste
- Black pepper powder to taste
For Garnishing
- Roasted walnut roughly chopped
- Coriander leaves
- Orange slices
How To Make Carrot Quinoa Salad
Preparation to make this delicious quinoa salad start with cooking quinoa.
Let it cool down and meanwhile make the caramelized carrot with orange juice & maple syrup.
Mix everything and serve with garnishing. Fresh aroma of oranges and yogurt make it a lip-smacking salad.
Let see how to make this quinoa salad with carrot & yogurt tahini dressing from scratch step by step.
- First of all, wash quinoa with clean with water 2-3 times. Add it in a pan with vegetable stock and boil on a medium flame for 5-7 minutes. Switch off the flame and cover with a lid for 5 minutes. It will absorb all the water and perfectly cooked after this.
- Meanwhile, prepare caramelized carrot. To make it first take a non-stick pan and dry roast coriander seeds. If you don't have seeds then use coarsely ground coriander powder.
- Once it starts giving aroma than add butter, carrot, orange juice, orange zest, maple syrup, and vegetable stock. Cook on medium-low flame until carrots are tender.
- To make yogurt tahini dressing just add everything listed for dressing in a bowl and whisk together to make a smooth paste.
- Once quinoa is cool down, mix 3 tablespoon dressing and caramelized carrot together in a mixing bowl.
- Take a salad bowl and place this quinoa mixture and dressing as sides.
- Garnish it with roasted walnut, carrot mix, orange slices, and coconut flakes. You can add coriander leaves too and serve chilled or at room temperature.
- Carrot quinoa salad with yogurt tahini dressing is ready to serve and enjoy.

Tips & FAQ's
- If the vegetable stock is not available then feel free to use normal water.
- Tahini yogurt dressing is completely optional. You can skip and simply add salt, pepper and lemon juice.
- In case you do not like a caramelized carrot then just add your favorite roasted vegetables and add salt, pepper, and lemon as per taste.
To make perfect quinoa, water, and quinoa ratio should be 2:1. First clean and wash ½ cup quinoa, boil it with 1 cup of water on the medium-high flame. When water content remains very less just switch off the flame and cover with the lid for 5 minutes. That's all you need to do to get the perfectly cooked quinoa.
To make the yogurt tahini dressing, mix herbs, maple syrup, and tahini paste with the yogurt. Use greek yogurt because it is thick and perfect for the dressing.
Use hung curd in case of unavailability of greek yogurt. Garnish with roasted walnut and coconut slices and serve at room temperature.
Skip this step and simply use lemon juice, salt, and pepper. This quinoa salad will taste great even without tahini dressing so it is completely optional.

- 1 teaspoon coriander seeds (coarsely ground coriander powder)
- 2 tablespoon butter
- 3 carrots medium size carrot julienne cut
- 1 orange juice and its zest (1 Medium size orange)
- 2 tablespoon maple syrup or honey
- ¼ cup vegetable stock or plain water
To Make Yogurt Tahini Dressing
- ½ cup Greek yogurt
- 2 tablespoon tahini
- ½ Lemon juiced
- 1 garlic clove minced
- 4 tablespoon coriander leaves chopped finely
- 1 tablespoon maple syrup or honey
- Salt to taste
- Black pepper powder to taste
For Garnishing
- ½ cup roasted walnut roughly chopped
- Coriander leaves
- Orange slices
