    Bottlegourd/Doodhi/Lauki With Granules/Soya Chunks

    In childhood I recalled had been always fussy over bottlegourd/doodhi/lauki curry whenever my mom cooked. Never liked this veggie untill I started my blogging. Have tried many version so far, will update on my blog one by one. Soya granules or chunks are a good source of protein for vegetarians.
    Bottlegourd is rich in dietary fibre, soluble and insoluble. Means it helps in curing constipation and easy to digest. Having 96% of water content it keeps the body cool during summer and maintains water level. Contains Iron, Vit B and C and lots of minerals like sodium,potassium which regulates blood pressure.
    If something is healthy than I can eat that, my funda now :P. After having kids I make sure to make it differntly so that my kids find it tasty and eat without any fuss. Best part is it helps in weighloss too. So now jumping on the recipe
    Ingredients: Sufficient for three
    people
    400 Gm
    bottlegourd or small bottlegourd/doodhi/lauki
    1 Cup soya
    chunks
    1 Medium
    sized onion chopped finely
    1 Tsp
    ginger-garlic paste
    1 teaspoon cumin
    seeds
    ½ Tsp
    turmeric powder
    ¼ Tsp
    garam masala
    ½ teaspoon red
    chili powder
    ½ Tsp
    coriander powder
    Salt as per
    taste
    Oil for
    cooking
    Method: Heat 1 teaspoon oil in a pan and roast
    the soya chunks. It should be brown in color and then take out the pan. Now
    soak all soya chunks in warm water and keep aside till the other preparation is
    done.

     

    Peel the
    bottle gourd and cut into small pieces. Heat oil in a pan and add cumin seeds.
    Let it splutter and add chopped onion, fry till onion becomes golden in color.
    To this add ginger-garlic paste & stir for few seconds. Add cut bottlegourd,
    cover the lid and cook on low flame till bottlegourd is half cooked. To this
    add all dry spices & soaked soya chunks with 1 cup of water. Adjust salt as
    per taste and mix well. Again cover the lid and cook for another 10 min on low
    flame.
    Have this with paratha/roti/chapati/flatbread. Its so yummy.Try it/
